Ingredients

For Cooking Dal

3-4 cups Water, पानी

2 cups Yellow moong dal (soaked for 30-40 minutes) मूंग की दाल

Salt to taste, नमक स्वादअनुसार

A pinch of asafoetida, हींग

A pinch of Turmeric powder, हल्दी पाउडर

3-4 tbsp Butter, cubed, मक्खन

 

For Topping

2-3 no. Green chillies, finely chopped, हरी मिर्च

1 no. large Onion, finely chopped, प्याज

 

For Masala

Salt to taste, नमक स्वादअनुसार

1 heaped tbsp Cumin seeds, जीरा

1 ½ tbsp Black peppercorns, काली मिर्च के दाने

1 no. Black cardamom, बड़ी इलायची

 

For Tadka

2-3 tbsp Oil, तेल

2-3 tbsp Ghee, घी

5-6 no. dry Red chillies, broken into half, सूखी लाल मिर्च

A pinch of Asafoetida, हींग

A pinch of Degi red chili powder, देगी लाल मिर्च पाउडर

 

For Dal Muradabadi

½ cup Water, पानी

3-4 tbsp Butter, cubed, मक्खन

Cooked dal, पकी हुई दाल

 

For Assembling

Cooked dal, पकी हुई दाल

Butter, cubed, मक्खन

Lemon juice, नींबू का रस

Prepared Tadka, तयार किया हुआ तड़का

A pinch of Chaat masala, चाट मसाला

Onion, finely chopped (optional) प्याज

Green chillies, finely chopped (optional) हरी मिर्च

Prepared Masala, तयार किया हुआ मसाला

Papdi, crushed, पापड़ी

Green chutney (optional) हरी चटनी

A pinch of degi red chili powder (optional) देगी लाल मिर्च पाउडर

 

For Garnish

Coriander sprig, धनिया पत्ता

Process

For Cooking Dal

  • In a pressure cooker, add water, yellow moong dal, salt to taste, a pinch of asafoetida, turmeric powder, butter, close it with a lid and cook it for 3-4 whistles until cooked well.
  • Mash it well with the help of masher and Keep it aside for further use.

 

For Masala

  • In a pan, add salt to taste, cumin seeds, black peppercorns, black cardamom and dry roast it on medium flames for 2-3 minutes until aromatic.
  • Transfer it to a mixer grinder jar and grind it to a fine powder.
  • Keep it aside for further use.

 

For Tadka

  • In a pan, add oil, ghee, once it’s hot, add dry red chillies, asafoetida and toss it for a minute.
  • Add degi red chili powder and mix it well.
  • Transfer it to a bowl and keep it aside for further use.

For Dal Muradabadi

  • In a kadai, add water, butter and get a quick boil.
  • Add cooked dal and let it cook for a while on low flames until thick.
  • Transfer it to a serving bowl, add butter, lemon juice, prepared tadka, a pinch of chaat masala, green chillies, onions, prepared masala, papdi, green chutney and a pinch of degi red chili powder.
  • Garnish it with coriander sprig and serve hot.
