Soya Chunks 65 - It's been a long time since we last made a snacks recipe. Here's one made with Soya chunks and a recipe that's close to my heart and memories, the 65 style masala. Do try it..

Ingredients

For Soaking

2 cups Warm water, गुनगुना पानी

Salt to taste, नमक स्वादअनुसार

1 tsp Ginger Garlic paste, अदरक लहसुन का पेस्ट

2 tbsp Curd, beaten, दही

1 ½ tsp Degi red chilli powder, देगी लाल मिर्च पाउडर

A pinch of asafoetida (optional)  हींग

1 ½ cups Soya Nuggets, सोया नगेट्स

 

For Marination

Salt to taste, नमक स्वादअनुसार

2 tbsp curd, beaten, दही

1 tsp Degi red chilli powder, देगी लाल मिर्च पाउडर

A pinch of asafoetida, हींग

¼ cup Rice flour, चावल का आटा

½ tsp Ginger Garlic paste, अदरक लहसुन का पेस्ट

1 tbsp Rice flour or Cornstarch, चावल का आटा

 

For Tadka

1 ½ tsp Oil, तेल

1 tsp Mustard seeds, बारीक राई

¼ tsp Fennel seeds, सौंफ

1 inch Ginger, chopped, अदरक

2-3 Garlic cloves, roughly chopped, लहसुन

3 Green chillies, chopped, हरी मिर्च

2 sprig Curry leave, करी पत्ते

Fried Soya Nuggets, तले हुए सोया नगेट्स

1 tsp Black pepper powder, काली मिर्च का पाउडर

1 tsp Degi red chilli powder, देगी लाल मिर्च पाउडर

2 tsp Lemon juice (optional) नींबू का रस

1 tbsp Coriander leaves, chopped, धनिया पत्ता

 

Other Ingredients

Oil for Frying,  तेल तलने के लिए

 

For Garnish

Coriander sprig, धनिया पत्ता

Lemon wedge, नींबू की फांक

 

Process

For Soaking

  • In a bowl, add lukewarm water, salt to taste, ginger garlic paste, curd and mix well.
  • Add degi red chilli powder, asafoetida and mix well.
  • Add soya nuggets in it and soak it for 10 to 15 minutes.

 

For Cooking

  • In a pan or wok, add soaked soya nuggets and cook for a while.
  • Strain the soya nuggets and transfer into a mixing bowl and keep it aside for further use.

 

For Marination

  • In a bowl, add soaked and cooked soya nuggets, salt to taste, curd and mix it well.
  • Add degi red chilli powder, asafoetida and mix well.
  • Add rice flour, ginger garlic paste and coat the soya nuggets properly.
  • Once again add rice flour or cornstarch before frying for coating.

 

For Frying

  • Heat oil in a kadhai on low to medium heat.
  • Once oil gets hot, add marinated soya nuggets and fry on medium flame until it turns light golden in color.
  • Remove on an absorbent paper and keep it aside for further use.
  • Once again heat the oil on high flame, add soya nuggets and fry until crisp in texture.

 

For Tadka

  • Heat a pan or wok on medium heat, add oil once oil gets hot, add mustard seeds, fennel seeds and let it splutter.
  • Now add garlic, ginger saute for a while.
  • Add curry leaves, green chilli and saute them nicely.
  • Add fried soya nuggets and toss well, add black pepper powder, degi red chilli powder and tossed everything well, add lemon juice and tossed once again.
  • Switch off the flame, add coriander leaves and toss
  • Garnish with coriander sprig, lemon wedge and serve hot.
