Ingredients
For Egg Pulusu
2-3 heaped tbsp Oil, तेल
4-5 no. Fenugreek seeds, मेथी दाना
1 tsp Cumin seeds, जीरा
3 medium Onions, finely chopped, प्याज
4 no. Green chillies (less spicy & cut into half) हरी मिर्च
½ inch Ginger (peeled & chopped) अदरक
1 large Tomato, roughly chopped, टमाटर
¼ cup Water, पानी
Salt to taste, नमक स्वादअनुसार
1 tsp Turmeric powder, हल्दी पाउडर
2 heaped tsp Degi red chilli powder, देगी लाल मिर्च पाउडर
1 cup Water, पानी
½ cup Tamarind pulp, इमली का गूदा
1 tsp Sugar, चीनी
½ cup Water, पानी
Sauteed eggs, तले हुए अंडे
2 tbsp fresh Coriander leaves, chopped, धनिया पत्ता
For Sauteing Eggs
1-2 tbsp Oil, तेल
10 no. Boiled eggs, उबले हुए अंडे
2 sprig Curry leaves, कडी पत्ते
Salt to taste, नमक स्वादअनुसार
½ tsp Degi red chili powder, देगी लाल मिर्च पाउडर
For Garnish
Coriander sprig, धनिया पत्ता
Process
For Egg Pulusu
- In a handi, add oil, once it’s hot, add fenugreek seeds, cumin seeds and let it splutter well.
- Add onions, green chillies, ginger and cook until onions are translucent.
- Add tomato, water, salt to taste and let it cook for a while.
- Add turmeric powder, degi red chili powder and saute it for a minute.
- Add water, tamarind pulp, sugar and let it simmer for 7-8 minutes.
- Add water, sauteed eggs and cook it for a few minutes on medium flames.
- Finish it with fresh coriander leaves and give it a good mix.
- Transfer it to a serving dish and garnish it with coriander spring.
- Serve hot with steam rice.
For Sauteing Eggs
- In a pan, add oil, once it’s hot, add boiled eggs, curry leaves, salt to taste, degi red chilli powder and fry them for a minute.
- Turn off the flames and keep it aside for further use.
