
Ingredients
For Cooking Chana Dal
3 cups Chana dal (soak for 2-3 hrs) चना दाल
1 tbsp Ghee, घी
2 no. Green chillies (less spicy, broken into half) हरी मिर्च
6 cups water, पानी
Salt to taste, नमक स्वादअनुसार
2 tsp Turmeric powder, हल्दी पाउडर
1 tbsp Prepared Ginger Garlic paste, अदरक लहसुन का पेस्ट
For Ginger Garlic Paste
1 inch Ginger, peeled, अदरक
6-7 no. Garlic cloves, लहसुन
Salt to taste, नमक स्वादअनुसार
For Lahori Chana Dal Tadka
2 tbsp Ghee, घी
1 tbsp Cumin seeds, जीरा
½ inch Ginger (peeled & chopped) अदरक
2 no. Green chilies (less spicy & chopped) हरी मिर्च
2 cups Cooked Chana dal, पकी हुई चना दाल
Salt to taste, नमक स्वादअनुसार
⅓ cup Water, पानी
1 tbsp Ghee, घी
¼ cup Water, पानी
2-3 no. Green chillies, finely chopped, हरी मिर्च
1 tbsp Coriander leaves, chopped, धनिया पत्ता
½ tsp Black peppercorns, crushed, कुटी काली मिर्च
1 ½ tsp Ghee (for finishing) घी
For Garnish
Coriander sprig, धनिया पत्ता
Ghee, घी
For Lauki Dal Tadka
2 tbsp Ghee, घी
3-4 no. Garlic clove, लहसुन
1 tsp Cumin seeds, जीरा
2 medium Onion, chopped, प्याज
1 no. Green chili (less spicy & chopped) हरी मिर्च
1 tsp Degi red chili powder, देगी लाल मिर्च पाउडर
½ tsp Turmeric powder, हल्दी पाउडर
½ tsp Coriander powder, धनिया पाउडर
A pinch of asafoetida, हींग
½ cup Bottle gourd, grated, लौकी
Salt to taste, नमक स्वादअनुसार
2 cups Cooked Chana dal, पकी हुई चना दाल
½ cup Water, पानी
1 tbsp Ghee, घी
For Garnish
Coriander sprig, धनिया पत्ता
Process
For Cooking Chana Dal
- In a handi, add chana dal, ghee, green chili, water, salt to taste, turmeric powder, prepared ginger garlic paste and mix it well.
- Cook it for 20-25 minutes on moderate heat.
- Remove the excess dirt and impurities of dal and keep it cooking on moderate heat.
For Ginger Garlic Paste
- In a mortar pestle, add ginger, garlic cloves and make it coarsely paste.
- Keep it aside for further use.
For Lahori Chana Dal Tadka
- In a handi, heat ghee, add cumin seeds, ginger, green chilies and saute well.
- Add cooked chana dal, salt to taste and cook it well, add water and cover it with the lid.
- Now, cook for 4-5 minutes on moderate heat.
- Add ghee, warm water and mix it well, add the and mix it well
- Add green chili, coriander leaves, black peppercorns and mix it well.
- Serve on a serving bowl, add the on top.
- Serve hot with roti.
For Lauki Dal Tadka
- In a handi or kadai, heat ghee, add garlic, cumin seeds and saute it till garlic gets golden brown color into it.
- Add onion, green chili and saute them, add degi red chili powder, turmeric powder, coriander powder, asafoetida and saute it for a minute.
- Add bottle gourd, salt to taste and saute it well.
- Add cooked chana dal and water and mix it well, cover it with the lid and cook it for 8-10 minutes on moderate heat.
- Add warm water, ghee and mix it well and cook it for 2-3 minutes.
- Serve on a serving plate, garnish it with coriander sprig.
- Serve hot with roti.
