Ingredients

For Cooking Toor dal and Moong dal

5-6 cups water, पानी

1 ½ cups Toor dal, washed, तूर दाल

½ cup Moong dal, washed, मूंग की दाल

Salt to taste, नमक स्वादअनुसार

1 ½ tsp Turmeric powder, हल्दी पाउडर

1 tsp Degi Red chili powder, देगी लाल मिर्च पाउडर

1 cup Warm water, पानी

 

For Cooking Rajasthani dal 

4 ½ cup water, पानी

1 cup Toor dal, washed, तूर दाल

½ cup Moong dal chilka, washed, छिलके वाली मूंग दाल

Salt to taste, नमक स्वादअनुसार

1 ¼ tsp Turmeric powder, हल्दी पाउडर

1 tsp Degi Red chili powder, देगी लाल मिर्च पाउडर

 

For Rajasthani dal Tadka

1 ½ tbsp Oil, तेल

1 tsp Cumin seeds, जीरा

A pinch of asafoetida, हींग

½ tsp Turmeric powder, हल्दी पाउडर

5-4 no. dry Red chilies, सूखी लाल मिर्च

½ tsp Jaggery, गुड़

 

For Garnish

Coriander sprig, धनिया पत्ता

 

For Maharashtrian Dal Tadka

1 tbsp Oil, तेल

½ tsp small Mustard seeds, बारिक राय

2 no. Green chilies, roughly chopped, हरी मिर्च

2 no. sprig Curry leaves, करी पत्ते

1 no. raw Mango, sliced, कच्चा आम

½ tsp Sugar, चीनी

Salt to taste, नमक स्वादअनुसार

1 ½ cups Cooked Toor dal & Moong dal, पकी हुई तूर दाल और मूंग दाल

1 ½ cup water, पानी

1 tbsp Ghee, घी

 

For Garnish

Raw Mango, sliced, कच्चा आम

 

For Dhaba Style Dal Tadka

1 tbsp Oil, तेल

½ tsp Cumin seeds, जीरा

1 tbsp Ginger Garlic paste, अदरक लहसुन का पेस्ट

½ medium onion, sliced, प्याज

1 tsp Degi red chili powder, देगी लाल मिर्च पाउडर

½ tsp Turmeric powder, हल्दी पाउडर

A pinch of asafoetida, हींग

½ tsp Coriander powder, धनिया पाउडर

½ medium Tomato, chopped, टमाटर

½ cup Water, पानी

1 ½ cups Cooked Toor dal & Moong dal, पकी हुई तूर दाल और मूंग दाल

2 tbsp Butter, cube, बटर

 

For Ginger Garlic Paste

1 inch Ginger, peeled, अदरक

6-7 no. Garlic cloves, लहसुन

3 no. Green chilies, spicy, हरी मिर्च

Salt to taste, नमक स्वादअनुसार

 

For Garnish

Coriander sprig, धनिया पत्ता

Butter, cubes, बटर

Process

For Cooking Toor Dal And Moong Dal

  • In a handi, add water, toor dal and moong dal, salt to taste, turmeric powder, degi red chili powder and mix it well.
  • Cook it for 15-20 minutes on moderate heat.
  • Remove the excess dirt and impurities of dal and keep it cooking on moderate heat.
  • Once dal gets cooked very well, keep it aside for further use.

 

For Cooking Rajasthani Dal

  • In handi, add water, toor dal and moong dal chilka, salt to taste, turmeric powder, degi red chili powder and mix it well.
  • Cook it for 15-20 minutes on moderate heat.
  • Remove the excess dirt and impurities of dal and keep it cooking on moderate heat.
  • Once dal gets cooked very well then transfer it into a bowl and keep it aside for further use.

 

For Rajasthani Dal Tadka

  • In a kadai, heat oil, add cumin seeds, asafoetida, turmeric powder, fry red chilies and saute it well.
  • Add cooked toor dal & moong chilka and mix it well.
  • Cook it for 6-7 m minutes on moderate heat, add jaggery and mix it well.
  • Serve on a serving bowl and garnish it with coriander sprig.
  • Serve hot with roti.

 

For Maharashtrian Dal Tadka

  • In a kadai or handi, heat oil, add mustard seeds, green chili, curry leaves and saute it well.
  • Add raw mango and cook it for 1-2 minutes, add salt to taste, sugar, cooked toor dal & moong dal, water and mix it well.
  • Cook dal for 7-8 minutes on moderate heat, add ghee and mix it well.
  • Serve on a serving bowl, garnish it with raw mango.
  • Serve hot with rice.

 

For Dhaba Style Dal Tadka

  • In a kadai or handi, heat oil, add cumin seeds, prepared ginger garlic paste and saute it well.
  • Add onion and cook it till the onions get translucent, add degi red chili powder, turmeric powder, coriander powder, asafoetida, tomato and saute it well.
  • Add cooked toor dal & moong dal, water and mix it well, cook it for 8-10 minutes on moderate heat.
  • Add butter and mix it well.
  • Serve on a serving bowl, add butter on top, coriander leaves and coriander sprig.
  • Serve hot with roti.

 

For Ginger Garlic Paste

  • In a mortar pestle, add ginger, garlic, green chili, salt to taste and make it coarsely paste.
  • Keep it aside for further use.
