Ingredients

For Vegetable Stock

3-4 no. Mushroom, cut into half, मशरूम

2-3 no. Baby corn, roughly sliced, बेबी कॉर्न

1 large Carrot, roughly sliced, गाजर

1-2 tbsp Oil, तेल

1 tbsp Tender Coriander stems, roughly chopped, धनिये के डंठल

1 heaped tbsp Black peppercorns, काली मिर्च के दाने

3 no. Bay leaf, तेज पत्ता

4-5 cups Water, पानी

1 no. Cabbage stem, cut into half, पत्ता गोभी के डंठल

 

For Manchurian Soup

1-2 tbsp Oil, तेल

1 inch Ginger (peeled & finely chopped) अदरक

2 no. Green chillies (less spicy & finely chopped) हरी मिर्च

1 large Onion, finely chopped, प्याज

Salt to taste, नमक स्वादअनुसार

6-7 no. Mushrooms, optional, sliced, मशरूम

1 large Cabbage, finely chopped, पत्ता गोभी

2-3 no. medium Carrots (peeled & finely chopped) गाजर

15-18 no. French beans, finely chopped, फ्रेंच बीन्स

1 tbsp Tender coriander stems, finely chopped, धनिये के डंठल

Prepared Sauce Mixture, तैयार किया हुआ सॉस मिश्रण

Vegetable stock, वेजिटेबल स्टॉक

Salt to taste, नमक स्वादअनुसार

2-3 tbsp Cornstarch slurry, कॉर्नस्टार्च घोल

Prepared manchurian balls, तैयार किया हुआ मंचूरियन बॉल्स

⅓ cup Spring onion, chopped, हरी प्याज

2-3 tbsp Coriander leaves, chopped, धनिया पत्ता

 

For Manchurian Mixture

1 tsp Ginger & green chillies, finely chopped, अदरक और हरी मिर्च

1 cup Cabbage, carrots & french beans, finely chopped, पत्ता गोभी, गाजर, फ्रेंच बींस

1 tsp Black pepper powder, काली मिर्च पाउडर

¾ cup Refined flour, मैदा

1 tsp Dark soy sauce, डार्क सोया सॉस

½ tbsp Ginger Garlic paste, अदरक लहसुन का पेस्ट

Salt to taste, नमक स्वादअनुसार

½ tsp Baking soda, बेकिंग सोडा

¼ cup Water, पानी

¼ tsp Vinegar, सिरका

 

For Sauce Mixture

1 tbsp Dark soy sauce, डार्क सोया सॉस

2 tbsp Green chilli sauce, ग्रीन चिली सॉस

2 tbsp Red chilli sauce, रेड चिली सॉस

1 tsp Vinegar, सिरका

1 tbsp Black pepper powder, काली मिर्च पाउडर

1 tsp Black peppercorns, crushed, कुटी हुई काली मिर्च

2 heaped tbsp Tomato ketchup, टमाटर केचप

 

Other Ingredients

Oil for frying, तेल तलने के लिए

Boiled noodles, उबले हुए नूडल्स

 

For Garnish

Fried noodles, फ्राइड नूडल्स

Prepared manchurian balls, तैयार किया हुआ मंचूरियन बॉल्स

Spring onion, हरी प्याज

Chilli oil, चिली ऑइल

Process

For Vegetable Stock

  • In a saucepot, add mushrooms, baby corn, carrots, oil and saute it for a minute.
  • Add tender coriander stems, black peppercorns, bay leaf, water, cabbage stem and let it simmer for 15-20 minutes on low flames.
  • Strain the stock and keep it aside for further use.

For Manchurian Soup

  • In a wok, add oil, once it’s hot, add ginger, green chillies, onion, salt to taste and saute it on high flames for a while.
  • Add mushrooms, cabbage, carrots, french beans, tender coriander stems and cook it on high flames for 2-3 minutes.
  • Add prepared sauce mixture and give it a good mix.
  • Add prepared vegetable stock, salt to taste and simmer it for 5-6 minutes.
  • Add cornstarch slurry, prepared manchurian balls and give it a quick boil.
  • Finish it with spring onion and fresh coriander leaves.
  • Transfer it to a serving bowl, garnish it with fried noodles, prepared manchurian balls, spring onion and chilli oil.
  • Serve hot.

For Manchurian Mixture

  • In a bowl, add ginger, green chillies, cabbage, black pepper powder, refined flour, dark soy sauce, ginger garlic paste, salt to taste, baking soda, water, vinegar and give it a good mix.
  • Heat oil in a kadai, once it’s hot, drop lemon size manchurian balls in hot oil and fry them until golden in colour.
  • Transfer it to an absorbent sheet and keep it aside for further use.
  • Add boiled noodles in hot oil and fry them until golden in colour.
  • Transfer the noodles to an absorbent sheet and keep it aside for further use.

For Sauce Mixture

  • In a bowl, add dark soy sauce, green chilli sauce, red chilli sauce, vinegar, black pepper powder, crushed black peppercorns, tomato ketchup and give it a good mix.
  • Keep it aside for further use.
