Ingredients
For Dough
800 gms Gram Flour, बेसन
½ cup Rice flour, चावल का आटा
Salt to taste, नमक स्वादअनुसार
¼ tsp Asafoetida, हींग
1 tsp Turmeric powder, हल्दी पाउडर
1 tbsp Oil, तेल
Water as required, पानी
1 tbsp Oil (after kneading) तेल
For Masala MIxture
1 cup Ghee, घी
200 gms Gram flour, बेसन
2 tbsp White sesame seeds, सफेद तिल
2 tbsp Carom seeds, अजवाइन
Salt to taste, नमक स्वादअनुसार
1 tbsp Turmeric powder, हल्दी पाउडर
½ tsp Asafoetida, हींग
1 heaped tbsp Coriander powder, धनिया पाउडर
1 heaped tbsp Degi red chili powder, देगी लाल मिर्च पाउडर
Salt to taste, नमक स्वादअनुसार
2 tbsp Fennel powder (optional) सौंफ पाउडर
2 tbsp Dry mango powder, आमचूर पाउडर
1 heaped tbsp Black pepper powder, काली मिर्च का पाउडर
1 cup Peanut powder (optional) मूंगफली का पाउडर
For Bhakarwadi
Prepared dough, तैयार किया हुआ आटा
Prepared Masala Mixture, तैयार किया हुआ मसालों का मिश्रण
2 tbsp Tamarind paste, इमली का पेस्ट
A pinch of degi red chili powder, देगी लाल मिर्च पाउडर
A pinch of dry mango powder, आमचूर पाउडर
Salt to taste, नमक स्वादअनुसार
For Sev
Prepared dough, तैयार किया हुआ आटा
½ tsp Degi red chili powder, देगी लाल मिर्च पाउडर
½ tsp Dry mango powder, आमचूर पाउडर
Salt to taste, नमक स्वादअनुसार
For Bharwa Mirchi
12-15 no. Bhavnagri chillies, slit into middle, भावनगरी मिर्च
Prepared Masala Mixture, तैयार किया हुआ मसालों का मिश्रण
2 tbsp Oil (for shallow frying) तेल
Other Ingredients
Oil for greasing, तेल
Oil for frying, तलने के लिए तेल
For Garnish
Coriander sprig, धनिया पत्ता
Process
For Dough
- In a bowl, add gram flour, rice flour, salt to taste, a pinch of asafoetida, turmeric powder, oil, water as required and knead it into a semisoft dough.
- Add oil, knead it well and keep it aside for further use.
For Masala Mixture
- In a pan, add ghee, once it’s hot, add gram flour and roast it for 5-6 minutes on low flames.
- Add white sesame seeds, carom seeds, salt to taste and cook it for a minute.
- Add turmeric powder, asafoetida, coriander powder, degi red chili powder, salt to taste and mix it well.
- Add fennel powder, dry mango powder, black pepper powder, peanut powder and cook it on medium flames for 3-4 minutes.
- Transfer the mixture to a tray or bowl and keep it aside for further use.
For Bhakarwadi
- In a bowl, add prepared masala mixture, tamarind paste and give it a good mix.
- Take prepared dough, flatten it with a rolling pin and spread prepared masala mixture evenly.
- Carefully roll it like a swiss roll, apply water and seal the edge properly.
- Cut the roll into small slices and keep it aside for a while.
- Heat oil in a kadai, once it’s hot, add prepared bhakarwadi and fry them until golden in colour.
- Transfer it to a tray, sprinkle a pinch of degi red chili powder, a pinch of dry mango powder, salt to taste and toss it gently.
- Transfer it to a serving bowl and serve hot.
For Sev
- Apply oil in the chakli/sev mould, add prepared dough and seal the mould with the lid, gently drop the sev in the hot oil and fry it until golden in colour on medium flames..
- Transfer it to a tray, sprinkle a pinch of degi red chili powder, dry mango powder, salt to taste and toss it well.
- Transfer it to a serving bowl and serve hot.
For Bharwa Mirchi
- Take bhavnagri chillies, slit the chillies from the middle and make a cavity.
- Add a spoonful of prepared masala mixture and stuff the chillies well.
- In a pan, add oil, once it’s hot, add stuffed chillies and cook it for 7-8 minutes until it’s cooked.
- Transfer it to a serving dish and garnish it with coriander sprig.
- Serve hot with steam rice, dal tadka.
