Ingredients

For Cleaning Cauliflower

1 medium Cauliflower, cut into medium size florets, फूलगोभी

1 medium Cauliflower, cut into small size florets, फूलगोभी

Salt to taste, नमक स्वादअनुसार

Water as required, पानी

 

For Coating

1 medium Cauliflower, cut into florets, फूलगोभी

1 medium Cauliflower, cut into small size florets, फूलगोभी

1 tbsp Ginger garlic paste, अदरक लहसुन का पेस्ट

Salt to taste, नमक स्वादअनुसार

2 tbsp Cornstarch, कॉर्न स्टार्च

1 tbsp Refined flour, मैदा

 

For Batter

¼ cup Refined flour, मैदा

½ cup Cornstarch, कॉर्न स्टार्च

Salt to taste, नमक स्वादअनुसार

⅓ cup Water, पानी

Coated cauliflower, घोल में लिपटी हुई फुलगोभी

 

For Gobi Popcorn

Fried cauliflower, तली हुई फूलगोभी

Salt to taste, नमक स्वादअनुसार

½ tsp Black peppercorns, crushed, कुटी हुई काली मिर्च

½ tsp dried Oregano, ओरिगैनो

½ tsp Chilli flakes, चिली फ्लेक्स

 

For Gobi 65

1-2 tbsp Oil, तेल

4 no. dry Kashmiri red chillies, chopped, सूखी कश्मीरी लाल मिर्च

¼ tsp small Mustard seeds, छोटी राई

2-3 sprig Curry leaves, कड़ी पत्ता

4 no. Green chillies (less spicy & roughly chopped) हरी मिर्च

4-5 no. Garlic cloves, sliced, लहसुन

Fried Cauliflower, तली हुई फूलगोभी

Salt to taste, नमक स्वादअनुसार

½ tsp Degi red chili powder, देगी लाल मिर्च पाउडर

A pinch of black peppercorns, crushed, कुटी हुई काली मिर्च

2 tsp Lemon juice, नींबू का रस

 

For Gobi Manchurian

1-2 tbsp Oil, तेल

4 no. Garlic cloves, chopped, लहसुन

1 inch Ginger (peeled & finely chopped) अदरक

2 tbsp Tender Coriander stems with roots, finely chopped, धनिये के डंठल और जड़ें

4 no. Green chillies (less spicy & chopped) हरी मिर्च

1 tbsp Light soy sauce, सोया सॉस

1 tbsp Red chili sauce, रेड चिली सॉस

Little water, पानी

2 tbsp Tomato ketchup, टोमैटो केचप

½ tsp Sugar, चीनी

½ tbsp Vinegar, सिरका

Fried Cauliflower, तली हुई फूलगोभी

⅓ cup Spring onion, roughly chopped, हरी प्याज

3 tbsp fresh Coriander leaves, roughly chopped, धनिया पत्ता

½ tsp Black peppercorns, crushed, कुटी हुई काली मिर्च

 

Other Ingredients

Oil for frying, तलने के लिए तेल

 

For Garnish

Fried curry leaves, तलें हुए कडी पत्ते

Lemon wedge, नींबू की फांक

 

Process

For Cleaning Cauliflower

  • In a bowl, add cauliflower, salt to taste, water as required and leave it aside for a while.
  • Strain the cauliflower and keep it aside for further use.

 

For Coating

  • In a bowl, add cauliflower, ginger garlic paste, salt to taste, cornstarch, refined flour and dry coat it well.
  • Keep it aside for further use.

 

For Batter

  • In a bowl, add refined flour, cornstarch, salt to taste, water and make a smooth batter.
  • Add coated cauliflower and coat it well.
  • Take a kadai, add oil, once it’s hot, drop coated cauliflower and fry them until golden in colour on medium flames.
  • Transfer it to an absorbent sheet and keep it aside for further use.

 

For Gobi Manchurian

  • Add fried cauliflowers into hot oil and fry them on high flames until crispy.
  • Transfer it to a bowl, sprinkle some salt to taste, crushed black peppercorns, oregano, chilli flakes and toss it well.
  • Transfer it to a serving dish and serve hot with mint mayo or tomato ketchup.

 

For Gobi 65

  • In a wok, add oil, once it’s hot, add dry kashmiri red chillies, curry leaves and let it splutter well.
  • Add green chillies, garlic and saute it for a minute.
  • Add fried cauliflower, salt to taste, crushed black peppercorns, degi red chili powder and toss it on high flames for a while.
  • Finish it with lemon juice and mix it well.
  • Transfer it to a serving dish, garnish it with fried curry leaves and lemon wedge.
  • Serve hot.

For Gobi Manchurian

  • In the same wok, add oil, once it’s hot, add garlic, ginger, tender coriander stems with roots, green chillies and saute it on high flames.
  • Add light soy sauce, red chili sauce, little water, tomato ketchup, sugar, vinegar and give it a quick boil.
  • Add fried cauliflower and toss it well.
  • Finish it with spring onion, fresh coriander leaves, crushed black peppercorns and give it a good toss.
  • Transfer it to a serving dish and serve hot with schezwan chutney.
