Ingredients
For Laal Mirch Ka Gosht
1 cup Mustard oil, सरसों का तेल
1 inch Cinnamon stick, दालचीनी
2 no. Bay leaf, तेज पत्ता
1 kg Mutton with bones, मटन
4 large Onions, sliced, प्याज
Salt to taste, नमक स्वादअनुसार
15-20 no. Dry Bedgi red chillies, soaked, सूखी बेड़गी लाल मिर्च
½ tbsp Ghee, घी
2-3 tbsp Coriander seeds, roughly crushed, धनिये के बीज
1 ½ cups Curd, beaten, दही
Salt to taste, नमक स्वादअनुसार
2-3 cups Water, पानी
1 tbsp Tender Coriander stem, finely chopped, धनिये के डंठल
For Smoke
Coal, कोयला
1 no. Dry Bedgi red chilli, broke into half, सूखी बेड़गी लाल मिर्च
2 tsp Ghee, घी
For Garnish
Coriander sprig, धनिया पत्ता
Process
For Laal Mirch Ka Gosht
- In a handi, add mustard oil, once it’s hot, add cinnamon stick, bay leaf and let it splutter.
- Add mutton, onions and cook it for a while until golden in color.
- Add salt to taste, soaked dry red chillies, ghee and saute it for a while on medium flames.
- Add coriander seeds, curd, salt to taste and cook it for 10-12 minutes until cooked well.
- Add water and mix it well, cover it with a lid and cook it for 30-40 minutes on medium flames.
- Finish it with tender coriander stems.
- Place a small steel bowl in handi, add charred coal, dry red chili, pour some ghee and smoke for 2-3 minutes.
- Transfer the mutton in a serving bowl and garnish it with coriander sprig.
- Serve hot with roti.
