
Veg Manchurian gravy बाज़ार जैसे वेज मैंचूरीयन की रेसिपी perfect Manchurian tips

Ingredients
For Manchurian Balls
2 medium size Carrot, grated, गाजर
12-15 French beans, finely chopped, फ्रेंच बींस
½ Cabbage, finely chopped, पत्ता गोभी
1 inch Ginger, peeled, finely chopped, अदरक
2-4 Green chillies (less spicy) chopped, हरी मिर्च
3-4 Bread slice, trim the edges & cut it roughly, ब्रेड स्लाइस
1 ½ tsp Ginger Garlic paste, अदरक लहसुन का पेस्ट
Salt to taste, नमक स्वादअनुसार
2 tbsp Coriander leaves, chopped, धनिया पत्ता
1 tsp Black peppercorns, crushed, काली मिर्च का पाउडर
Salt to taste, नमक स्वादअनुसार
3 tbsp Refined flour, मैदा
1 tbsp Cornstarch, कॉर्न स्टार्च
½ tsp Baking powder, बेकिंग पाउडर
¼ tsp Baking soda, बेकिंग सोडा
Oil for frying, तलने के लिए तेल
For Gravy
1 tbsp Oil, तेल
½ inch Ginger, chopped, अदरक
2-3 Garlic cloves, chopped, लहसुन
2-3 Green chillies, chopped, हरी मिर्च
2 tbsp Spring onion (white part, bulb) chopped, प्याज़ पत्ता
Prepared Sauce Mixture, सॉस का मिश्रण
¼ cup Stock or water, वेजिटेबल स्टॉक
¼ tsp Vinegar, सिरका
½ tsp dark Soy sauce, सोया सॉस
Fried Manchurian Balls, तैयार किया हुआ मंचूरियन बॉल्स
1 ½ tsp Cornstarch slurry, कॉर्नस्टार्च स्लरी
2-3 tbsp Spring onion, chopped, प्याज़ पत्ता
½ tbsp Tender Coriander stem, finely chopped, धनिया के डंठल
½ inch Ginger, finely chopped, अदरक
2 Green chillies, finely chopped, हरी मिर्च
For Sauce Mixture
½ cup Water, पानी
1 tsp dark Soy sauce, सोया सॉस
¼ cup Stock or water, पानी
1 tsp Sugar, चीनी
1 tsp Vinegar, सिरका
¼ tsp Red chili sauce, रेड चिली सॉस (optional)
For Garnish
White sesame seeds, सफेद तिल
Chili oil, चिल्ली ऑल
Coriander sprig, धनिया पत्ता
Process
For Manchurian Balls
- In a large bowl, add carrot, french beans, cabbage, ginger, green chillies, bread slice, ginger garlic paste.
- Add salt to taste, coriander leaves, black peppercorns, salt to taste, refined flour, corn starch.
- Add baking powder, baking soda and mix everything well.
- Then take a small portion of the mixture in your hands.
- Roll it in your palm and make a round veggie ball.
- Make all veggie balls with the rest of the mixture and keep aside for further use.
For Frying
- Heat oil in a kadai, once the oil is medium hot, gently put the balls into the oil.
- Deep fry the balls in medium to hot oil until golden in color. Remove and keep on an absorbent paper.
- Then heat the oil on high heat and then deep fry the balls a second time until golden brown and crispy.
- Remove on an absorbent paper and keep aside for further use.
For Sauce Mixture
- In a bowl, add water, dark soya sauce, stock, sugar, vinegar, red chili sauce and mix it well.
- Keep aside for further use.
For Gravy
- In a wok or kadai, add oil on high flame , add ginger, garlic, spring onion and saute for 4-5 seconds.
- Add prepared sauce mixture, stock or water, vinegar, dark soy sauce and mix well.
- Add fried manchurian balls, cornstarch slurry and mix well.
- Continue to boil until the gravy thickens and turns glossy.
- Add spring onion, tender coriander stems, ginger, green chili and give a nice stir.
- Onces it’s done, transfer it into a serving dish.
- Garnish it with sesame seeds, chili oil, coriander sprig and serve hot with rice.
