Ingredients

For Potato Mixture 

1 ½ tbsp Oil, तेल

1 inch Ginger (peeled & finely chopped) अदरक

6-7 French beans, chopped, फ्रेंच बीन्स

¼ cup Sweet corn, chopped, भुट्टे के दाने

1 large Carrot, chopped, गाजर

Salt to taste, नमक स्वादअनुसार

2 tbsp Schezwan sauce, शेज़वान सॉस

⅓ cup Soya granules, सोया ग्रेन्यूल्स

2-3 tbsp Water, पानी  

6-7 large Potatoes (boiled & peeled) उबले हुए आलू

1 tbsp Schezwan sauce, शेज़वान सॉस

1 tbsp Tender Coriander stem, finely chopped, धनिये का डंठल

 

For Slurry 

2 cups Refined flour, मैदा

 ½ cup Cornflour, कॉर्नफ्लौर 

Salt to taste, नमक स्वादअनुसार

1 tsp Degi red chili powder, देगी लाल मिर्च पाउडर

½ tbsp Schezwan sauce, शेज़वान सॉस

1 tsp Ginger Garlic paste, optional, अदरक लहसुन का पेस्ट

Water as required, पानी

 

Other Ingredients 

Oil for frying, तेल तलने के लिए

Refined flour (for coating) मैदा

 

For Garnish 

Coriander sprig, धनिया पत्ता

Process

For Potato Mixture

  • In a wok, add oil, once it’s hot, add ginger and sauté it for a minute.
  • Add french beans, sweet corn, carrot, salt to taste, and sauté it for a while on high flame.
  • Add schezwan sauce and mix it well. Add soya granules, water and cook it for 2-3 minutes on high flame.
  • Add potatoes, schezwan sauce, tender coriander stems, mash it well and cook for 4-5 minutes on high flame.
  • Transfer it to a tray and keep it aside to cool at room temperature.
  • Take a spoonful of mixture, insert an ice cream stick and give it a lollipop shape or any desired shape.
  • Keep it aside for further use.

 

For Slurry

  • In a bowl, add refined flour, cornflour, salt to taste, degi red chili powder, schezwan sauce, ginger garlic paste, water and make a thick smooth batter.
  • Keep it aside for further use.

 

For Frying

  • In a tray, add refined flour, place prepared lollipops and dry coat it well.
  • Dip the lollipops in prepared slurry and drop it in hot oil. Fry it for 4-5 minutes until crispy.
  • Transfer it to a serving dish and garnish it with coriander sprig.
  • Serve hot with schezwan sauce.
