
Veg Triple Szechwan fried Rice वेज शेजवान फ्राइड राइस Street Style Fried Rice
Noodles? Rice? Vegetables? Spicy? Schezwan? Why not all? For all those hostel food woes, here you go, a spicy treat.
Ingredients
For Boiling Rice
1 ltr Water, पानी
2 cups Basmati rice, soaked, बासमती चावल
1 tsp Oil, तेल
For Schezwan paste
15-20 Dry red chilli, soaked, dessed, सुखी लाल मिर्च
3 Garlic cloves, लहसुन
¼ cup Oil, तेल
1 inch Ginger, chopped, अदरक
Prepared red chilli paste, तैयार लाल मिर्च का पेस्ट
½ tbsp Coriander tender steam, chopped, धनिया के डंठल
½ tbsp Vinegar, सिरका
¼ cup Tomato ketchup, टमाटर केचप
Salt to taste, नमक स्वाद अनुसार
For Manchurian Balls
½ Cabbage, finely chopped, पत्ता गोभी
1 medium size Carrot, grated, गाजर
1 Green chilli, chopped, हरी मिर्च
4-5 French beans, chopped, फ्रेंच बींस
1 tbsp Soy sauce, सोया सॉस
1 tsp Ginger Garlic paste, अदरक लहसुन का पेस्ट
2 tbsp Cornstarch, कॉर्न स्टार्च
2 tbsp Gram flour, बेसन
½ tsp Baking soda, खाने का सोडा
Oil for frying, तेल
For Schezwan Rice
1 tbsp Oil, तेल
½ inch Ginger, chopped, अदरक
2-3 Garlic, chopped, लहसुन
1 medium size Carrot, chopped, गाजर
2 Green chilli, chopped, हरी मिर्च
¼ cup French beans, chopped, फ्रेंच बींस
½ Capsicum, chopped, शिमला मिर्च
1 ½ tsp Soy sauce, सोया सॉस
½ tsp Black pepper powder, काली मिर्च का पाउडर
¼ tsp Sugar, चीनी
1 ½ tbsp Prepared schezwan paste, तैयार शेज़वान का पेस्ट
1 cup Noodles, boiled, नूडल्स
1 ⅓ cups Prepared boiled rice, उबले हुए चावल
Salt to taste, नमक स्वाद अनुसार
¼ cup Spring onion, chopped, प्याज पत्ता
For Sauce
2 tsp Oil, तेल
½ inch Ginger, chopped, अदरक
2 Garlic cloves, chopped, लहसुन
2 tbsp Spring onion white part, chopped, प्याज पत्ता
1 heaped tbsp Prepared schezwan paste, तैयार शेज़वान का पेस्ट
½ tbsp Tomato ketchup, टमाटर केचप
½ tsp Soy sauce, सोया सॉस
⅓ cup Water, पानी
Salt to taste, नमक स्वाद अनुसार
¼ tsp Sugar, चीनी
1 tbsp Cornstarch slurry, कॉर्न स्टार्च का लिजाम
1 tbsp Coriander leaves, chopped, धनिया पत्ता
For Garnish
Fried noodles, तले हुए नूडल्स

Process
For Boiling Rice
- In a sauce pot add water. Once it starts boiling add soaked basmati rice.
- Cover it with a lid and cook on medium flame. Once it’s done strain the rice.
- Keep it aside for further use.
For Schezwan Chilli Paste
- In a grinder jar, add soaked dry red chillies, garlic cloves and grind into a smooth paste.
- Heat oil in a pan. Add ginger. Saute for a minute. Add prepared red chili paste, coriander stem. Saute it well.
- Add vinegar, tomato ketchup, salt to taste and mix everything well and cook on medium flame for 5 minutes
- Transfer it into a bowl and keep it aside.
For Manchurian Balls
- In a bowl , add cabbage, carrot, green chili, French beans, soya sauce, ginger garlic paste. Mix it well. Add cornstarch, ground flour, baking soda. Mix everything well.
- Now make lemon sized balls from this mixture and keep aside.
- Heat oil in a kadhai on medium heat then deep fry the balls until golden brown and crispy. Remove and keep aside for further use.
For Sauce
- In a pan heat oil and add ginger, garlic, spring onion white part then saute for a few seconds on high heat.
- Now add prepared schezwan paste, tomato ketchup, soya sauce, water, salt, sugar and bring it to a boil.
- Then add corn-starch slurry and let it thickens then add fried manchurian balls and continue cooking for half a minute.
- Finish it with coriander leaves and set aside for further use.
For Assembling Triple Schezwan Rice
- In a wok or pan heat oil on high heat and add ginger, garlic, carrot, green chillies, french beans, capsicum and saute for a minute on high heat.
- Now add soya sauce, black pepper powder, sugar, prepared schezwan paste, and saute for a few seconds.
- Then add boiled noodles, rice and toss it properly until everything is mixed well.
- Now add salt, and finish with spring onions then stir it once and switch off the flames.
- Serve hot in a bowl then pour the manchurian sauce with the balls and garnish with fried noodles, coriander leaves.
