
Ingredients
For Chicken Marination
900 gms Chicken (Drumstick & thigh with bones) चिकन
½ tsp Turmeric powder, हल्दी पाउडर
1 tsp Degi red chilli powder, देगी लाल मिर्च पाउडर
1 tbsp Coriander powder, धनिया पाउडर
Salt to taste, नमक स्वादअनुसार
1 tbsp Dry Fenugreek leaves, crushed, कसूरी मेथी
1 ½ cup Curd, beaten, दही
For Tari Wala Chicken
2-3 tbsp Oil, तेल
½ tsp Cumin seeds, जीरा
1 no. Bay leaf, तेज़पत्ता
½ inch Cinnamon stick, दालचीनी
1 inch Ginger (peeled & finely chopped) अदरक
2 no. Green chillies, chopped, हरी मिर्च
2 no. Garlic cloves, chopped, लहसुन
3 medium Onions, chopped, प्याज
1 tbsp Tender Coriander stems, chopped, धनिया के डंठल
1 medium Tomato, chopped, टमाटर
½ tsp Coriander powder, धनिया पाउडर
½ tsp Degi red chilli powder, देगी लाल मिर्च पाउडर
Marinated Chicken, मैरिनेटेड चिकन
2 cups Water, पानी
½ tbsp Prepared Masala, तैयार किया हुआ मसाला
2 tbsp Coriander leaves, finely chopped, धनिया पत्ता
For Masala
1 tbsp Black peppercorns, काली मिर्च के दाने
½ tbsp Coriander seeds, धनिया की बीज
4-5 no. Cloves, लौंग
8-9 no. Green cardamom, हरी इलायची
6-7 no. Black cardamom, बड़ी इलायची
Salt to taste, नमक स्वादअनुसार
For Garnish
Coriander sprig, धनिया पत्ता
Ginger, julienned, अदरक
Process
For Chicken Marination
- In a bowl, add chicken, turmeric powder, degi red chili powder, coriander powder, salt to taste, dry fenugreek leaves, curd and marinate well.
- Leave it aside for 10-15 minutes.
For Tari Wala Chicken
- In a handi, add oil, once it’s hot, add cumin seeds, bay leaf, cinnamon stick, ginger, green chillies, garlic and saute it for a minute.
- Add onions and cook it for 5-6 minutes until it’s golden in color.
- Add tender coriander stems, tomato and saute it well for a while.
- Add coriander powder, degi red chili powder and mix it well, add marinated chicken and cook until tender.
- Add water, cover it with the lid and cook it for 15-20 minutes on medium flames.
- Finish it with prepared masala, coriander leaves and give it a quick boil.
- Transfer it to a serving dish or bowl, garnish it with coriander sprig and ginger.
- Serve hot with rice.
For Masala
- In a pan, add black peppercorns, coriander seeds, cloves, green cardamom, black cardamom, salt to taste and roast them for 2-3 minutes on medium flames.
- Transfer it to a mixer grinder jar and grind it into fine powder.
- Keep it aside for further use.
