
Ingredients
For Mutton Marination
800 gms Mutton (with bones) मैरिनेटेड मटन
Salt to taste, नमक स्वादअनुसार
1 tsp Ginger Garlic paste, अदरक लहसुन का पेस्ट
1 ½ heaped tbsp Coriander powder, धनिया पाउडर
1 heaped tsp Degi red chilli powder, देगी लाल मिर्च पाउडर
½ tsp Turmeric powder, हल्दी पाउडर
2 tsp Fried Onion oil, तला हुआ प्याज का तेल
For Keema Marination
400 gms Mutton kheema, मटन खीमा
Salt to taste, नमक स्वादअनुसार
2-3 tbsp Curd, beaten, दही
2-3 Green chillies, chopped, हरी मिर्च
2-4 Garlic cloves, chopped, लहसुन
½ inch Ginger, chopped, अदरक
few Coriander stems, chopped, धनिया के डंठल
1 tbsp Coriander powder, धनिया पाउडर
For Ginger Garlic Paste
2 Green chilli, हरी मिर्च
4-5 Garlic cloves, लहसुन
½ inch Ginger, peeled, slice, अदरक
Salt to taste, नमक स्वादअनुसार
For Tempering
2 tbsp Ghee, घी
2 tbsp Fried Onion oil, तला हुआ प्याज का तेल
1 tsp Cumin seeds, जीरा
2 Black cardamom, बड़ी इलायची
2-4 Cloves, लॉन्ग
Prepared Ginger Garlic Paste, अदरक लहसुन का पेस्ट
4 medium size Onion, chopped प्याज
Marinated Mutton, मैरिनेटेड मटन
Marinated Keema, मैरिनेटेड मटन खीमा
1 cup Fresh Tomato puree, ताज़े टमाटर की प्यूरी
½ cup Mutton stock, मटन स्टॉक
1 tsp Prepared Masala, तैयार किया हुआ मसाला
A pinch of Nutmeg, grated, जायफल
For Masala
½ inch Cinnamon stick, दालचीनी
2-4 Cloves, लॉन्ग
6-7 Black peppercorns, काली मिर्च के दाने
2-4 Green cardamom, हरी इलायची
2-3 Bay leaf, तेजपत्ता
Salt to taste, नमक स्वादअनुसार
For Garnish
Coriander sprig, धनिया पत्ता
Process
For Mutton Marination
- In a bowl, add mutton, salt to taste, ginger garlic paste, coriander powder.
- Add degi red chili powder, turmeric powder, fried onion oil and mix everything well.
- Keep aside for 5-10 minutes.
For Keema Marination
- In a bowl, add mutton keema, salt to taste, curd, green chilies, garlic cloves, ginger.
- Add coriander stems, coriander powder and marinate everything well.
For Ginger Garlic Paste
- In a mortar pestle, add green chili, garlic cloves, ginger, salt to taste and make a smooth paste of it.
For Tempering
- In a large sauce pot or handi, add ghee, fried onion oil, once it’s hot, add cumin seeds.
- Add black cardamom, cloves and let them crackle for a few seconds.
- Add prepared ginger garlic paste and saute it well.
- Add onion and saute until it’s translucent or light pink in color.
- Add marinated mutton and keep cooking on medium flame.
- Cover it with the lid and let the mutton cook in its own juices for 5-6 minutes.
- Add marinated keema and keep sauteing for 10 minutes.
- Add tomato puree and mix it well. Cook on medium flame till releases its oil
- Add mutton stock and mix it well and then cover it with a lid and cook on low flame for 10-15 minutes.
- Add prepared masala, grate nutmeg and stir well.
- Transfer into a serving bowl or plate. Garnish with coriander sprig and serve hot with paratha.
For Masala
- In a pan, add cinnamon stick, cloves, black peppercorns, green cardamom, bay leaf.
- Add salt to taste and dry roast on low flame until the spices turn aromatic.
- Transfer it into a grinder jar and grind it into a fine powder. Keep it aside for further use.
