Winter spl Chicken Curry सर्दियों में बनाएँ मज़ेदार पालक चिकन Saag Chicken
Ingredients
For Paste
1 cup Coriander leaves (roughly torn), धनिया पत्ता
2 large bunch Spinach, (roughly torn), पालक
3 no. Green chillies (less spicy & chopped), हरी मिर्च
1 large Tomato (diced), टमाटर
For Chicken Marination
900 gms Chicken legs, चिकन
1 tsp Degi red chilli powder, देगी लाल मिर्च पाउडर
½ tsp dry Mango powder, आमचूर पाउडर
Salt to taste, नमक स्वादअनुसार
1 tbsp Ginger Garlic paste, अदरक लहसुन का पेस्ट
3 tbsp Mustard oil, सरसों का तेल
For Garam Masala
2 heaped tbsp Black peppercorns, काली मिर्च के दाने
5-6 no. Cloves, लौंग
10-12 no. Black cardamom, बड़ी इलायची
2 tbsp Coriander seeds, धनिये के बीज
½ tsp Fenugreek seeds, मेथी दाना
½ tbsp Cumin seeds, जीरा
3 no. Mace, जावित्री
2-3 no. Green cardamom, हरी इलायची
Salt to taste, नमक स्वादअनुसार
For Winter Chicken Curry
¼ cup Mustard oil, सरसों का तेल
Little water, पानी
2 no. Cloves, लौंग
1 no. Black cardamom, बड़ी इलायची
2 medium Onions (chopped), प्याज
Prepared paste, तैयारी की हुई पेस्ट
½ cup Curd (beaten), दही
Marinated chicken, मैरीनेट किया हुआ चिकन
2 tbsp Prepared garam masala, तैयार किया हुआ गरम मसाला
Smoked ghee, स्मोक्ड घी
2 cups Water, पानी
2 tbsp prepared garam masala, तैयार किया हुआ गरम मसाला
2 tsp Fenugreek leaves, कसूरी मेथी
2-3 tbsp Ghee, घी
Other Ingredients
Coal, कोयला
1 tbsp Ghee, घी
For Garnish
Coriander sprig, धनिया पत्ता
Lemon wedge, नींबू की फांक
Process
For Winter Paste
- In a bowl, add coriander leaves, spinach, green chillies and tomato.
- Transfer it to a mixer grinder jar and grind into a smooth paste.
- Keep it aside for further use.
For Chicken Marination
- In a bowl, add chicken legs, degi red chilli powder, dry mango powder, salt to taste, ginger garlic paste, mustard oil and mix it well.
- Keep it aside to marinate for a while.
For Garam Masala
- In a kadai, add black peppercorns, cloves, black cardamom, coriander seeds, mace, green cardamom, salt to taste and dry roast it for a minute.
- Transfer it to a mixer grinder jar and grind it into a smooth powder.
- Keep it aside for further use.
For Winter Chicken Curry
- In a kadai, add mustard oil, once it’s smoky hot, add cloves, black cardamom and let it splutter.
- Add onion and saute it for a while until golden in color.
- Add winter paste and cook it for 2-3 minutes.
- Add curd and cook it for 5-6 minutes until cooked well.
- Add marinated chicken and cook it until tender.
- Heat a coal on a gas range and place it in a steel bowl.
- Add prepared garam masala, place the bowl in the kadai, add ghee and cover it with a lid.
- Add the same smoked ghee, water, prepared garam masala and let it simmer for a while until oil is separated.
- Finish it with fenugreek leaves, ghee and mix it well.
- Transfer it to a serving dish, garnish it with coriander sprig and lemon wedge.
- Serve hot with roti or rice.
