Ingredients
For Cooking Mutton
¼ cup Mustard oil, सरसों का तेल
½ inch Cinnamon stick, दालचीनी
1 no. Bay leaf, तेज पत्ता
3 no. Black cardamom, बड़ी इलायची
9-10 no. Black peppercorns, काली मिर्च के दाने
2-3 no. Cloves, लौंग
2 medium Onions (roughly sliced), प्याज
1 kg Mutton with bones, मटन
1 heaped tbsp Ginger Garlic paste, अदरक लहसुन का पेस्ट
Salt to taste, नमक स्वादअनुसार
2 heaped tbsp Coriander powder, धनिया पाउडर
1 tsp Turmeric powder, हल्दी पाउडर
1 heaped tbsp Degi red chilli powder, देगी लाल मिर्च पाउडर
½ tsp Cumin powder, जीरा पाउडर
3 large Tomatoes (cut into half), टमाटर
½ cup Curd (beaten), दही
2 tbsp Tender Coriander stems with roots (finely chopped), धनिया के डंठल
For Sauteing Veggies
2 tbsp Ghee, घी
3-4 no. dry Kashmiri red chillies (roughly torn), सूखी कश्मीरी लाल मिर्च
3 medium Onions (cut into quarters), प्याज
Salt to taste, नमक स्वादअनुसार
3 no. Green chillies (less spicy & roughly chopped), हरी मिर्च
For Mutton Do Pyaza
Cooked mutton, पका हुआ मटन
1 tbsp Ghee, घी
1 cup Hot water, गर्म पानी
Sauteed Veggies, पकी हुई सब्जियां
½ cup fresh Coriander leaves (finely chopped), धनिया पत्ता
1 tsp Fenugreek leaves (crushed), कसूरी मेथी
For Garnish
Coriander sprig, धनिया पत्ता
Process
For Cooking Mutton
- In a pressure cooker, add mustard oil, once it’s smoky hot, add cinnamon stick, bay leaf, black cardamom, black peppercorns, cloves, onions and cook for 2-3 minutes until onion gets translucent in texture.
Add mutton with bones, ginger garlic paste, salt to taste and cook for a minute. - Add coriander powder, turmeric powder, degi red chili powder, cumin powder and cook for another minute.
- Now, add tomatoes, curd, tender coriander stems and cook for 5-6 minutes.
- Cover it with the lid and let it cook for 8-10 whistles or until it’s cooked.
- Keep it aside to depressurize the cooker.
For Sauteing Veggies
- In a pan, add ghee, once it’s hot, add dry kashmiri red chillies, onions, salt to taste, green chillies and let it cook on high flames for 2-3 minutes.
- Transfer it into a tray and keep it aside for further use.
For Mutton Do Pyaza
- In a handi, add cooked mutton, ghee, hot water and give it a quick boil.
Add sauteed veggies and cook for 2-3 minutes. - Finish it with fresh coriander leaves, crushed fenugreek leaves.
- Transfer it into the serving dish and garnish it with coriander sprig.
- Serve hot with roti.
