Rajasthani Chana Dal घर जैसा राजस्थानी चना दाल की सब्जी Unique Dal Recipe

Ingredients
For Boiling Dal
2 cups Chana dal (soaked 3-4 hrs), भिगोई हुई चना दाल
3-4 cups Water, पानी
Salt to taste, नमक स्वादअनुसार
¼ tsp Turmeric powder, हल्दी पाउडर
For Ginger Garlic Paste
2 no. Green chillies (less spicy & roughly chopped), हरी मिर्च
3-4 no. Garlic cloves, chopped, लहसुन
2 inch Ginger (peeled & roughly sliced), अदरक
For Rajasthani Chana Dal Sabji
2-3 tbsp Oil, तेल
1 tsp Cumin seeds, जीरा
1 tsp White sesame seeds, सफेद तिल
Prepared ginger garlic paste, अदरक लहसुन का पेस्ट
4 medium Onions (cut into quarters), प्याज
Salt to taste, नमक स्वादअनुसार
¼ tsp Turmeric powder, हल्दी पाउडर
2 tsp Degi red chili powder, देगी लाल मिर्च पाउडर
¼ cup Dal water, दाल का पानी
1 cup Curd (beaten), दही
2 tbsp fresh Coriander leaves (chopped), धनिया पत्ता
Boiled dal, उबली हुई दाल
¼ tsp Carom seeds, अजवाइन
½ cup Dal water, दाल का पानी
Prepared tadka, तैयार किया हुआ तड़का
Salt to taste, नमक स्वादअनुसार
For Tadka
2-3 tbsp Ghee, घी
1 no. Black cardamom, बड़ी इलायची
4 no. dry Kashmiri red chillies (roughly chopped), सूखी कश्मीरी लाल मिर्च
1 tsp Degi red chilli powder, देगी लाल मिर्च पाउडर
1 tsp Black peppercorns (crushed), कुटी हुई काली मिर्च
2 tbsp fresh Coriander leaves (chopped), धनिया पत्ता
For Garnish
Ghee, घी
Coriander sprig, धनिया पत्ता
Chilli oil, चिल्ली ऑइल
Process
For Boiling Dal
- In a handi, add soaked chana dal, water, salt to taste, and turmeric powder mix well.
- Cover it with the lid and cook for 15-20 minutes or until it is cooked.
- Switch off the flames and keep it aside for further use.
For Ginger Garlic Paste
- In a mortar pestle, add green chillies, garlic, ginger and grind it into coarsely paste.
- Keep it aside for further use.
For Rajasthani Chana Dal Sabji
- In a handi, add oil. Once it’s hot, add cumin seeds, white sesame seeds, prepared ginger-garlic paste and cook for a minute.
- Add onions and salt to taste and cook for a while until onion becomes translucent in texture.
- Add turmeric powder and degi red chili powder and cook for a minute.
- Add dal water, curd, fresh coriander leaves and cook for 4-5 minutes until oil separates from the masala.
- Now, add boiled dal, carom seeds, and dal water to adjust the consistency and let it cook for another 5-6 minutes.
- Finish it with prepared tadka, add salt to taste and give it a good mix.
- Transfer it to a serving dish and garnish it with ghee, coriander sprig and chilli oil.
- Serve hot with roti.
For Tadka
- In a pan, add ghee. Once it’s hot, add black cardamom, dry kashmiri red chillies, degi red chili powder, crushed black peppercorns, fresh coriander leaves and cook for 2 minutes.
- Switch off the flames and keep it aside for further use.
