Ingredients
For Paneer
5 ltr Milk, दूध
2-3 tbsp Vinegar, सिरका
½ tbsp Ghee, घी
For Ginger Garlic Paste
2 inch Ginger, peeled, अदरक
9-10 no. Garlic cloves, लहसुन
Salt to taste, नमक स्वादअनुसार
For Gravy
1 heaped tbsp Ghee, घी
½ tbsp Oil, तेल
Prepared Ginger Garlic paste, अदरक लहसुन का पेस्ट
4 medium Onions, cut into diced, प्याज
½ medium Capsicum, cut into diced, शिमला मिर्च
2 tsp Degi red chili powder, देगी लाल मिर्च पाउडर
½ tsp Turmeric powder, हल्दी पाउडर
2-3 tsp Coriander powder, धनिया पाउडर
3 medium Tomatoes, cut into diced, टमाटर
2 cups Remaining whey, पनीर के बचे हुए पानी
½ cup Water, पानी
For Soak Methi Leaves
Water as required, पानी
Salt to taste, नमक स्वादअनुसार
2 cups fresh Fenugreek leaves, ताजा मेथी के पत्ते
For Masala
1 tsp Fennel seeds, सौंफ
1 ½ tsp Cumin seeds, जीरा
1 tbsp Black peppercorns, काली मिर्च के दाने
1 heaped tbsp Coriander seeds, धनिये के बीज
Salt to taste, नमक स्वादअनुसार
1 heaped tbsp Chilli flakes, चिली फलैक्स
For Whey Juice
1 sprig Tulsi leaves, तुलसी पत्ता
9-10 no. Black peppercorns, crushed, कुटी हुई काली मिर्च
2-3 tsp Jaggery, roughly chopped, गुड़
1 cup Remaining Whey, पनीर के बचे हुए पानी
A pinch of salt, नमक
For Methi Paneer Kadai
¼ cup Oil, तेल
1 heaped tbsp Ghee, घी
Soaked Methi, भीगी हुई मेथी
1 large Onion, diced, प्याज
Prepared Gravy, तैयार की हुई ग्रेवी
⅓ cup Tomato ketchup, टाॅमेटो केचप
Prepared Paneer, cut into cube, पनीर
2 medium Tomatoes, cut into diced, टमाटर
1 ½ medium Capsicum, cut into diced, शिमला मिर्च
Prepared Gravy, तैयार की हुई ग्रेवी
2 tbsp Coriander leaves, chopped, धनिया पत्ता
2 no. Green chillies (less spicy & chopped) हरी मिर्च
½ inch Ginger (peeled & julienned) अदरक
1 tsp Prepared Masala, तयार किया हुआ मसाला
Other Ingredient
Prepared roti, रोटी
2 tsp Ghee, घी
For Garnish
Coriander sprig, धनिया पत्ता
Ginger (peeled & julienned) अदरक
A pinch of Prepared Masala, तयार किया हुआ मसाला
Lemon wedge, नींबू फांक
Process
For Paneer
- In a handi, add milk and Simmer it for 10-15 minutes.
- Add vinegar, ghee and stir well. Simmer it until curdles.
- Turn off the flame and keep it aside to rest.
- Strain the whey water with the help of muslin cloth and rinse the paneer.
- Shape the paneer into a block and put weight to remove excess water. Keep it aside to set for a few minutes.
- Cut into cubes and keep it aside for further use.
For Ginger Garlic Paste
- In a mortar pestle, add ginger, garlic, salt to taste and make a coarse paste.
- Keep it aside for further use.
For Gravy
- In a kadai, heat ghee, oil, add prepared ginger garlic paste and saute it for a minute.
- Add onions, capsicum and saute it for a minute on high flames or until translucent.
- Add degi red chili powder, turmeric powder, coriander powder, tomatoes and cook it for 10-15 minutes on moderate heat.
- Grind the gravy into smooth paste with the help of the hand blender, add water and give it a quick boil.
- Transfer it to the bowl and keep it aside for further use.
For Soak Methi Leaves
- In a bowl, add water, salt to taste and fresh fenugreek leaves.
- Keep it aside to soak for 10-12 minutes.
For Masala
- In a pan, add fennel seeds, cumin seeds, black peppercorns, coriander seeds, salt to taste, chili flakes and dry roast it on medium flame for a minute.
- Transfer it to a mortar pestle and grind it coarsely.
- Keep it aside for further use.
For Whey Juice
- In a mortar pestle, add tulsi leaves, black peppercorns and crush it well.
- Transfer it to a cup, add jaggery, remaining whey, a pinch of salt and stir it well.
- Serve hot.
For Methi Paneer Kadai
- In a kadai, heat oil, ghee, add soaked methi and saute it for 2-3 minutes.
- Add onion, prepared gravy, tomato ketchup and mix it well.
- Add prepared paneer, tomatoes, capsicum and cook it well for 5-6 minutes.
- Add prepared gravy, cover it with lid and let it simmer for 2-3 minutes on low flame.
- Finish it with coriander leaves, green chillies and ginger.
- Transfer it to a serving dish, garnish it with coriander sprig, ginger, lemon wedges and sprinkle some prepared masala.
- Serve hot with roti.
For Roasting roti
- In a tawa, add prepared roti and cook it on both sides.
- Transfer it to a plate, apply ghee and keep it aside for further use.
