For Soak Methi Leaves
2 cups fresh Fenugreek leaves, ताजा मेथी के पत्ते
2 cups Water, पानी
Salt to taste, नमक स्वादानुसार
For Tempering
1 tbsp Oil, तेल
1 tsp Ghee, घी
½ tsp Cumin seeds, जीरा
2 Garlic cloves, chopped, लहसुन
1 large Onion, chopped, प्याज
4-5 medium size Potato, peeled, diced, आलू
Salt to taste, नमक स्वादअनुसार
½ tsp Turmeric powder, हल्दी पाउडर
¼ tsp Degi red chilli powder, देगी लाल मिर्च पाउडर
little Water, पानी
½ medium size Tomato, chopped, टमाटर
1 Green chilli, less spicy, chopped, हरी मिर्च
1 cup fresh Fenugreek leaves, soaked, chopped, ताजा मेथी के पत्ते
For Garnish
Coriander sprig, धनिया पत्ता
½ inch Ginger, julienned, अदरक

Process
Home Style Aloo Methi
For Soak Methi Leaves
- In a bowl, add fenugreek leaves, water, salt to taste and keep it aside for 5-10 minutes.
For Tempering
- In a kadai, add oil, ghee once it’s hot, add cumin seeds and let it splutter well.
- Add garlic cloves, onion and saute it well.
- Add diced potato, salt to taste, turmeric powder, degi red chilli powder and mix everything well.
- Cover it with the lid and cook on medium flame until the potatoes turn soft.
- Add little water and saute well. Add tomato, green chilli, little water and mix it well.
- Add fenugreek leaves and mix it well. Cover it with the lid and cook for 2 minutes on slow flame.
- Transfer it into a serving dish. Garnish it with coriander sprig, ginger julienned and serve hot with puri or roti.
Restaurant Style Aloo Methi
Process
- In a kadai, add oil once it’s hot, add cumin seeds and let it splutter well.
- Add garlic cloves, onion and saute it well until light brown in color.
- Add green chilli, asafoetida, turmeric powder, degi red chilli powder, coriander powder and saute it well.
- Add fresh tomato puree, salt to taste, sugar and saute it well on medium flame.
- Add little water, soaked fenugreek leaves and saute it well.
- Add boiled potatoes, little water and toss it well. Check the seasoning once.
- Finish it with lemon juice and mix it well.
- Transfer it into a serving bowl, garnish it with dry fenugreek leaves, coriander sprig and serve hot with puri or roti.
