Ingredients
1 cup Toor dal (washed) तूर दाल
½ cup Chana dal (washed & soaked for 1 hr) चना दाल
For Cooking Dal
2-3 heaped tbsp Ghee, घी
2 tbsp Oil, तेल
¼ tsp Cumin seeds, जीरा
2 no. Dry kashmiri red chillies, broken into half, सूखी कश्मीरी लाल मिर्च
Washed Dals, धुली दाल
Salt to taste, नमक स्वादअनुसार
½ tsp Degi red chilli powder, देगी लाल मिर्च पाउडर
½ tsp Turmeric powder, हल्दी पाउडर
3-4 cups Water, पानी
For Methi Dal Tadka
2 tbsp Oil, तेल
1 tbsp Ghee, घी
1 tsp Cumin seeds, जीरा
A pinch of asafoetida, हींग
1 inch Ginger (peeled & finely chopped) अदरक
1 no. dry Red chili, broken into half, सूखी कश्मीरी लाल मिर्च
3 large Tomatoes, chopped, टमाटर
1 tbsp Tender Coriander stem, finely chopped, धनिये के डंठल
3 no. Green chillies (less spicy & finely chopped) हरी मिर्च
3-4 heaped tbsp Soaked fenugreek leaves, भीगी हुई कसूरी मेथी
Salt to taste, नमक स्वादअनुसार
⅓ cup fresh Tomato puree, ताज़ा टमाटर की प्यूरी
½ tsp Coriander powder, धनिया पाउडर
1 tsp Degi red chilli powder, देगी लाल मिर्च पाउडर
1 medium bunch fresh Fenugreek leaves, chopped, मेथी
1 tbsp Ghee, घी
Cooked Dal, पकी हुई दाल
Salt to taste, नमक स्वादअनुसार
A pinch of sugar, चीनी
2 tsp Lemon juice (for finishing) नींबू का रस
2 tbsp fresh Coriander leaves, chopped, धनिया पत्ता
For Soaking dry fenugreek leaves
3-4 heaped tbsp dry Fenugreek leaves, कसूरी मेथी
Water as required, पानी
For Garnish
Chilli oil, मिर्च का तेल
Coriander sprig, धनिया पत्ता
Process
For Cooking Dal
- In a pressure cooker, add ghee, oil, once it’s hot, add cumin seeds, dry kashmiri red chillies, washed dals, salt to taste and mix it well.
- Add degi red chili powder, turmeric powder, water, cover it with the lid and cook it for 3-4 whistles until cooked well.
For Methi Dal Tadka
- In a handi, add oil, ghee, once it’s hot, add cumin seeds, a pinch of asafoetida, ginger, dry red chili and saute it for a minute.
- Add tomatoes, tender coriander stems, green chillies, soaked fenugreek leaves, salt to taste and saute it for a while until tomatoes are mushy.
- Add fresh tomato puree and cook it for 5-6 minutes on high flames.
- Add coriander powder, degi red chili powder, fresh fenugreek leaves, ghee and saute it well.
- Add cooked dal, salt to taste and let it simmer for 7-8 minutes on medium flames.
- Finish it with a pinch of sugar, lemon juice, fresh coriander leaves and mix it well.
- Transfer it to a serving bowl or dish, garnish it with chilli oil and coriander sprig.
- Serve hot with roti and steam rice.
For Soaking Fenugreek Leaves
- In a bowl, add dry fenugreek leaves, water as required and soak it for 10-15 minutes.
- Keep it aside for further use.
