Ingredients
For Marination
3 kg Indian Salmon (deskin & cut into medium diced) रावस
½ tsp Turmeric powder, हल्दी पाउडर
½ tsp Degi red chili powder, देगी लाल मिर्च पाउडर
Salt to taste, नमक स्वादअनुसार
2 tbsp Curd, beaten, दही
For Paste
3 medium Onions, cut into quarters, प्याज
1 heaped tsp Turmeric powder, हल्दी पाउडर
1 tsp Degi red chili powder, देगी लाल मिर्च पाउडर
½ tsp Coriander powder, धनिया पाउडर
2 tbsp Tender coriander stems with roots, roughly chopped, धनिये के डंठल और जड़ें
Salt to taste, नमक स्वादअनुसार
For Frying
3-4 tbsp Mustard oil, सरसों का तेल
Marinated fish, मैरीनेटेड मछली
For Lucknowi Machi Ka Salan
Remaining mustard oil, बचा हुआ सरसों का तेल
¼ tsp Fenugreek seeds, मेथी दाना
2 no. Green chillies, slit into middle, हरी मिर्च
Prepared paste, तैयार किया हुआ पेस्ट
¼ cup Water, पानी
2-3 cups Water, पानी
Salt to taste, नमक स्वादअनुसार
Fried fish, तली हुई मछली
½ inch Ginger (peeled & finely chopped) अदरक
2 tbsp fresh Coriander leaves, finely chopped, धनिया पत्ता
1 tsp Lemon juice, नींबू का रस
For Garnish
Coriander sprig, धनिया पत्ता
Process
For Marination
- In a bowl, add indian salmon fish, turmeric powder, degi red chili powder, salt to taste, curd and mix it well.
- Keep it aside to marinate for a while.
For Paste
- In a bowl, add onions, turmeric powder, degi red chili powder, coriander powder, tender coriander stems with roots and salt to taste.
- Transfer it to a mixer grinder jar and grind it into a smooth paste.
- Keep it aside for further use.
For Frying
- In a pan, add mustard oil, once it’s smoky hot, place marinated fish pieces and cook them for 2 minutes on each side.
- Transfer it to a tray and keep it aside for further use.
For Lucknowi Machi Ka Salan
- In a handi, add remaining mustard oil, once it’s hot, add fenugreek seeds, green chillies, prepared paste and cook it for a while.
- Add water and give it a quick boil, add water to adjust the consistency, salt to taste and simmer it for 5-6 minutes.
- Add fried fish and cook it for a minute.
- Finish it with ginger, fresh coriander leaves, lemon juice and mix it well.
- Transfer it to a serving dish and garnish it with coriander sprig.
- Serve hot with roti and steam rice.
