Ingredients
For Dum Aloo Kali Mirch
¼ cup Oil, तेल
¼ inch Cinnamon stick, दालचीनी
3 no. Bay leaf, तेज पत्ता
3 large Onions, chopped, प्याज
2-3 tbsp Ghee, घी
2 tbsp Ginger Garlic paste, अदरक लहसुन का पेस्ट
6-7 no. large Potatoes (peeled & cut into half) आलू
Salt to taste, नमक स्वादअनुसार
1 tbsp Tender coriander stems, finely chopped, धनिये का डंठल
1 ½ tbsp Black peppercorns, crushed, कुटी हुई काली मिर्च
2 cups Curd, beaten, दही
1 tsp Sugar, चीनी
Prepared Masala Mixture, तैयार किया हुआ मसाले का मिश्रण
For Masala
1 tbsp Cumin seeds, जीरा
½ tbsp Fennel seeds, सौंफ
5-6 no. Cloves, लौंग
1 tbsp Coriander seeds, धनिये के बीज
2 tbsp Black peppercorns, काली मिर्च के दाने
5-6 no. Black cardamom, बड़ी इलायची
Salt to taste, नमक स्वादअनुसार
1 tbsp dry Fenugreek leaves, कसूरी मेथी
For Masala Mixture
2 heaped tbsp Prepared masala, तैयार किया हुआ मसाला
¼ cup Refined flour slurry, मैदे का घोल
½ cup Water, पानी
2 tbsp fresh Coriander leaves, finely chopped, धनिया पत्ता
For Garnish
Coriander sprig, धनिया पत्ता
Black peppercorns, crushed, कुटी हुई काली मिर्च
Process
For Dum Aloo Kali Mirch
- In a handi, add oil, once it’s hot, cinnamon stick, bay leaf, onions, ghee and saute it for a while.
- Add ginger garlic paste and saute for a minute.
- Add potatoes, salt to taste, tender coriander stems, black peppercorns and cook it until potatoes are half cooked.
- Add curd, cover it with the lid and let it cook for 10-12 minutes until cooked well.
- Finish it with sugar, prepared masala mixture and cook for 2-3 minutes on low flames.
- Transfer it to a serving dish or bowl, garnish it with coriander sprig and crushed black peppercorns.
- Serve hot with paratha or roti.
For Masala
- In a pan, add cumin seeds, fennel seeds, cloves, coriander seeds, black peppercorns, black cardamom, salt to taste and dry roast for 2-3 minutes until aromatic.
- Add dry fenugreek leaves and roast it for a minute.
- Transfer it to a mixer grinder jar and grind into fine powder.
- Keep it aside for further use.
For Masala mIxture
- In a bowl, add prepared masala, refined flour slurry, water, fresh coriander leaves and mix it well.
- Keep it aside for further use.
