Prawn Curry झींगा मसाला Correct method to clean Prawns Beginners Prawn recipe

After a LOT of requests, I had to make this recipe! And what's more, I'll show you an easy method to clean and de-vein prawns.

Ingredients

For Paste

2 no. large Onions, sliced, प्याज

1 no. Green chili, broken into half, हरी मिर्च

1 inch Ginger (peeled & roughly chopped) अदरक

8-9 no. Garlic cloves, लहसुन

½ tsp Cumin seeds, जीरा

1 tsp Coriander seeds, धनिये के बीज

2 tsp Degi red chili powder, देगी लाल मिर्च पाउडर

1 tsp Turmeric powder, हल्दी पाउडर

 

For Tomato Chutney

2 tbsp Oil, तेल

½ inch Cinnamon stick, दालचीनी

¼ tsp Cumin seeds, जीरा

½ tsp Fennel seeds, सौंफ

¼ tsp Nigella seeds, कलौंजी

¼ tsp dry Fenugreek seeds, मेथी दाना

¼ tsp small Mustard seeds, छोटी राई

½ inch Ginger (peeled & roughly chopped) अदरक

6 no. small Tomatoes, roughly diced, टमाटर

Salt to taste, नमक स्वादअनुसार

2 tsp Degi red chili powder, देगी लाल मिर्च पाउडर

½ cup Jaggery, गुड़

1 cup Water, पानी

½ cup raw Mango (peeled & chopped) कच्चा आम

 

For Prawns Curry

2-3 tbsp Oil, तेल

Prepared Paste, तैयार किया हुआ पेस्ट

Little water, पानी

Salt to taste, नमक स्वादअनुसार

2 cups Water, पानी

⅓ cup Tender coconut, roughly diced, नारियल की मलाई

½ cup raw Mango (peeled & roughly diced) कच्चा आम

½ cup Water, पानी

1 ½ cups Coconut milk, नारियल का दूध

Marinated Prawns, मैरीनेटेड झींगे

1 no. Green chili (less spicy & slit into middle) हरी मिर्च

1 no. Green chili, slit into middle, हरी मिर्च

1 tbsp Cornstarch slurry, कॉर्नस्टार्च घोल

 

For Prawns Marination

500 gms Prawns (clean & deveined) झींगे

Salt to taste, नमक स्वादअनुसार

1 tsp Lemon juice, नींबू का रस

 

For Garnish

Tender coconut, julienned, नारियल की मलाई

Coriander sprig, धनिया पत्ता

Process

For Paste

  • On a mortar pestle, add onions, green chili, ginger, garlic, cumin seeds, coriander seeds and grind it coarsely.
  • Transfer it to a tray, add turmeric powder, degi red chili powder and mix it well.
  • Keep it aside for further use.

 

For Tomato Chutney

  • In a saucepan, add oil, once it’s hot, add cinnamon stick, cumin seeds, fennel seeds, nigella seeds, dry fenugreek seeds, small mustard seeds and let it splutter.
  • Add ginger, tomatoes, salt to taste, degi red chili powder, jaggery, water and simmer it for 7-8 minutes on medium flames.
  • Add raw mango and cook it for a while until mushy.
  • Transfer it to a serving bowl, serve hot with prepared prawns curry and steam rice.

 

For Prawns Curry

  • In a handi, add oil, once it’s hot, add prepared paste, salt to taste and cook it well for a while.
  • Add water, tender coconut, raw mango and let it cook for 5-6 minutes on medium flames.
  • Add water to adjust the consistency, coconut milk, marinated prawns, green chillies and give it a quick boil.
  • Add cornstarch slurry and simmer it for a minute.
  • Transfer it to a serving bowl, garnish it with tender coconut and coriander sprig.
  • Serve hot with steam rice and prepared tomato chutney.

 

For Prawns Marination

  • In a bowl or tray, add cleaned prawns, salt to taste, lemon juice and mix it well.
  • Keep it aside to marinate for a while.
