Punjabi style Double Masala Chicken चिकन एक मसाला डबल spicy Chicken recipe
Ingredients
For Chicken Marination
1 tbsp Tender Coriander stems (finely chopped) धनिये के डंठल
½ inch Ginger (peeled & roughly chopped) अदरक
4 no. Green chillies (less spicy & roughly chopped) हरी मिर्च
1 ½ cups Curd, beaten, दही
900 gms Chicken (thigh with bone & drumstick) चिकन
Salt to taste, नमक स्वादअनुसार
1 tbsp Oil, तेल
1 heaped tbsp Coriander powder, धनिया पाउडर
1 tsp Turmeric powder, हल्दी पाउडर
For Chicken Double Masala
2-3 tbsp Ghee, घी
Marinated chicken, मैरीनेटेड चिकन
½ cup Water, पानी
2 tbsp fresh Coriander leaves, finely chopped, धनिया पत्ता
1 tsp fresh Mint leaves, finely chopped, पुदीना पत्ता
Prepared Onion Tomato Masala, तयार किया हुआ प्याज टमाटर मसाला
1 tsp dry Fenugreek leaves, crushed, कसूरी मेथी
¼ tsp Garam masala powder, गरम मसाला पाउडर
For Onion Tomato Masala
1 tbsp Ghee, घी
2-3 tbsp Mustard oil, सरसों का तेल
8-10 no. Black peppercorns, काली मिर्च के दाने
½ inch Cinnamon stick, दालचीनी
2 no. Bay leaf, तेज पत्ता
3 no. medium Onions, chopped, प्याज
1 tbsp Degi red chili powder, देगी लाल मिर्च पाउडर
1 tsp Coriander powder, धनिया पाउडर
¼ tsp Turmeric powder, हल्दी पाउडर
3 no. medium Tomatoes, roughly chopped, टमाटर
¼ cup Water, पानी
Salt to taste, नमक स्वादअनुसार
For Garnish
Coriander sprig, धनिया पत्ता
Lemon wedge, नींबू की फांक
Process
For Chicken Marination
- In a bowl, add tender coriander stems, ginger, green chillies, curd, chicken, salt to taste, oil, coriander powder, turmeric powder and mix it well.
- Keep it aside to marinate for a while.
For Chicken Double Masala
- In a handi, add ghee, once it’s hot, add marinated chicken and saute it for 2-4 minutes.
- Add water and let it cook for a while.
- Add fresh coriander leaves, mint leaves and mix it well.
- Add prepared onion tomato masala and give it a good mix.
- Cover it with a lid and cook it for 5-6 minutes until cooked well.
- Finish it with some dry fenugreek leaves, garam masala and mix it well.
- Transfer it to a serving dish, garnish it with coriander sprig and lemon wedges.
- Serve hot with roti.
For Onion Tomato Masala
- In a kadai, add ghee, mustard oil, once it’s hot, add black peppercorns, cinnamon stick, bay leaves and let it splutter.
- Add onion and saute it until golden in color.
- Add degi red chili powder, coriander powder, turmeric powder and saute it for a minute.
- Add tomato, water, salt to taste and cook it for a while on medium flames.
- Keep it aside for further use.
