Ingredients

For Frying

⅓ cup Mustard oil, सरसों का तेल

2 large Potatoes (peeled & diced) आलू

8-9 no. hard boiled Eggs, उबले हुए अंडे

 

For Dimer Kosha

⅓ cup Remaining Mustard oil, ​​सरसों का तेल

1 no. Bay leaf, तेज़ पत्ता

3 no. dry Red chillies, सूखी लाल मिर्च

1 tsp Cumin seeds, जीरा

2 ½ large Onions, sliced, प्याज

Prepared masala mixture, तैयार किया हुआ मसाला मिश्रण

3 medium Tomatoes, chopped, टमाटर

Fried potatoes, तले हुए आलू

¼ cup Water, पानी

2 no. Green chillies (less spicy & roughly torn) हरी मिर्च

½ cup Water, पानी

Salt to taste, नमक स्वादअनुसार

Fried Eggs, तले हुए अंडे

 

For Masala Mixture

1 tbsp Coriander powder, धनिया पाउडर

¼ tsp Cumin powder, जीरा पाउडर

1 heaped tsp Degi red chili powder, देगी लाल मिर्च पाउडर

½ tsp Turmeric powder, हल्दी पाउडर

1 tbsp Ginger Garlic paste, अदरक लहसुन का पेस्ट

¼ cup Water, पानी

 

For Garnish

Coriander sprig, धनिया पत्ता

Process

For Frying

  • In a non-stick kadai, add mustard oil, once it’s smoky hot, add potatoes and fry them until golden brown or until cooked well.
  • Transfer it to an absorbent paper and keep it aside.
  • Add boiled eggs and fry them for a while until golden brown.
  • Transfer it to an absorbent paper and keep it aside for further use.

 

For Dimer Kosha

  • In the same kadai, add mustard oil, once it’s smoky hot, add bay leaf, dry red chillies, cumin seed and let it splutter well.
  • Add onions and saute it for a while until golden in color.
  • Add prepared masala mixture and cook it for 2-3 minutes.
  • Add tomatoes, fried potatoes, water, green chillies, cover it with the lid and cook for a while until the tomatoes are mushy.
  • Add water to adjust the consistency, salt to taste, fried eggs and give it a quick boil.
  • Transfer it to a serving dish and garnish it with coriander sprig.
  • Serve hot with paratha or steam rice.

 

For Masala Mixture

  • In a bowl, add coriander powder, cumin powder, degi red chili powder, turmeric powder, ginger garlic paste, water and give it a good mix.
  • Keep it aside for further use.
