Ingredients

For 1 st Marination

2 Whole Chicken, cut into half, चिकन

2 tsp Lemon juice, नींबू का रस

Salt to taste, नमक स्वादअनुसार

2 tsp Ginger Garlic paste, अदरक लहसुन का पेस्ट

 

For 2 nd Marination

2 tbsp Mustard oil, सरसों का तेल

1 ¼ cup Hung curd, टंगा हुआ दही

2 tbsp Degi red chili powder, देगी लाल मिर्च पाउडर

½ tbsp Roasted gram flour, भुने चने का बेसन

1 tsp Black peppercorns, crushed, कुटी हुई काली मिर्च

1 heaped tbsp Ginger Garlic paste, अदरक लहसुन का पेस्ट

Salt to taste, नमक स्वादअनुसार

1 tbsp Mustard oil, सरसों का तेल

 

For Gravy

2 heaped tbsp Ghee, घी

2 no. Bay leaf, तेज पत्ता

½ inch Cinnamon stick, दालचीनी

3 no. large Onions, roughly chopped, प्याज

6 no. large Tomatoes, roughly chopped, टमाटर

1 tbsp Oil, तेल

½ tsp Turmeric powder, हल्दी पाउडर

2 tbsp Degi red chili powder, देगी लाल मिर्च पाउडर

1 tbsp Coriander powder, धनिया पाउडर

Salt to taste, नमक स्वादअनुसार

1 cup Water, पानी

1 cup Curd, beaten, दही

3 no. Green cardamom, हरी इलायची

2 cups Water, पानी

10-12 no. Cashew Nuts, काजू

 

For Cooking Chicken

2 tbsp Ghee, घी

Marinated chicken, मैरीनेटेड चिकन

For Butter Chicken

Prepared Gravy, तैयार की हुई ग्रेवी

1 cup Water, पानी

Salt to taste, नमक स्वादअनुसार

2 tbsp Honey, शहद

3-4 tbsp Butter, cubed, मक्खन

Salt to taste, नमक स्वादअनुसार

Cooked chicken, पका हुआ चिकन

¼ cup Fresh cream, ताजा मलाई

2-3 tbsp Butter, cubed, मक्खन

1 tbsp dry Fenugreek leaves, crushed, कसूरी मेथी

 

For Smoke

Coal, कोयला

Butter, cubed, मक्खन

 

For Garnish

Fresh cream, ताजा मलाई
dry Fenugreek leaves, crushed, कसूरी मेथी

Coriander sprig, धनिया पत्ता

Process

For 1st Marination

  • In a bowl, add chicken, salt to taste, lemon juice, ginger garlic paste and apply generously all over the chicken.
  • Keep it aside to marinate for 15-20 minutes.

 

For 2nd Marination

  • In a bowl, add mustard oil, hung curd, degi red chili powder, roasted gram flour, crushed black peppercorns, ginger garlic paste, salt to taste, mustard oil and mix it well.
  • Add marinated chicken and marinate it well.
  • Keep it aside for further use,

 

For Gravy

  • In a handi, add ghee, once it’s hot, add bay leaf, cinnamon stick, onions and saute it for a while until golden brown.
  • Add tomatoes, oil, turmeric powder, degi red chili powder, coriander powder, salt to taste and saute it for 5-6 minutes on medium flames.
  • Add water, curd and cook it well for a while.
  • Add green cardamom, water, cashew nuts, let it cook for 10-12 minutes until mushy and cooked well.
  • Transfer it to a mixer grinder jar and grind it into a smooth paste.
  • Keep it aside for further use.

 

For Cooking Chicken

  • In a grill pan, add ghee, once it’s hot, place marinated chicken and grill it for 5-6 minutes on each side until half cooked.
  • Transfer it to a tray and keep it aside for further use.

 

For Butter Chicken

  • In the same handi, add prepared gravy, water to adjust the consistency, salt to taste, honey, butter and give it a quick boil.
  • Add salt to taste, cooked chicken, fresh cream, butter and cook it for 7-8 minutes on medium flames until cooked well.
  • Finish it with fenugreek leaves and mix it well.
  • Place a small steel bowl in the middle, add burnt coal, butter, cover it with a lid and give it smoke for 2-3 minutes.
  • Transfer it to a serving bowl, garnish it with fresh cream, dry fenugreek leaves and coriander sprig.
  • Serve hot.
