Ingredients

Ingredients

For Garlic Green chili Paste

3 no. Green chillies (less spicy & broken into half) हरी मिर्च

5 no. Garlic cloves, लहसुन

 

For Vada Mixture

1 ½ tbsp Oil, तेल

1 tsp small Mustard seeds, छोटी राई

2 no. sprig Curry leaves, करी पत्ते

Prepared Garlic Green chili paste, तैयार किया हुआ लहसुन और हरी मिर्च का पेस्ट

4-5 large Boiled Potatoes (peeled & mashed) उबले हुए आलू

1 tsp Turmeric powder, हल्दी पाउडर

1 tbsp Butter, cubed, मक्खन

Little water, पानी

Salt to taste, नमक स्वादअनुसार

 

For Garlic Chutney

¼ cup Oil, तेल

10-11 no. Garlic cloves, लहसुन

½ cup Degi red chili powder, देगी लाल मिर्च पाउडर

7-8 no. Garlic cloves, लहसुन

¼ cup Water, पानी

Salt to taste, नमक स्वादअनुसार

 

For Batter

2 cups Gram flour, बेसन

1 tsp Turmeric powder, हल्दी पाउडर

Salt to taste, नमक स्वादअनुसार

Water as required, पानी

 

Other Ingredients

Oil for frying, तेल तलने के लिए

6-7 no. Ladi pav, लादी पाव

 

For Fried Chillies

4-5 no. Green chillies (spicy & slit into middle) हरी मिर्च

Salt to taste, नमक स्वादअनुसार

 

For Assembling

Garlic chutney, लहसुन की चटनी

Green chutney, हरी चटनी

Butter, soften, मक्खन

Potato mixture, तयार किया हुआ आलू का मिश्रण

Besan ka chura, तले बेसन का चुरा

Fried Green chillies, तली हुए हरी मिर्च

Process

For Garlic Green Chilli Paste

  • In a mortar pestle, add green chillies, garlic cloves and grind it coarsely.
  • Keep aside for further use.

 

For Vada Mixture

  • In a kadai, add oil, once it’s hot, add small mustard seeds, curry leaves and let it splutter.
  • Add prepared garlic green chili paste and saute it for 2-3 minutes.
  • Add boiled potatoes, turmeric powder and mix it well.
  • Add butter, little water, salt to taste and cook it for a while.
  • Transfer it to a tray and keep it aside for further use.

 

For Garlic Chutney

  • In a pan, add oil, once it’s hot, add garlic and fry them for 2-3 minutes.
  • Add degi red chili powder and saute it for a minute.
  • Add some more garlic cloves and toss it well.
  • Turn off the flames, add water, garlic cloves, salt to taste and mix it well.
  • Let it cool at room temperature for a while.
  • Transfer it to a mixer grinder jar and grind it smoothly.
  • Keep it aside for further use.

 

For Batter

  • In a large bowl, add gram flour, turmeric powder, salt to taste, water as required and make a smooth batter.
  • Keep it aside for further use.

 

For Fried Chillies

  • In a hot oil, add green chillies and fry them for a while.
  • Transfer it to an absorbent paper, sprinkle some salt and toss it gently.
  • Keep it aside for further use.

 

For Assembling

  • Take a ladi pav, cut it in half, apply green chutney, garlic chutney and butter evenly on both the sides.
  • Stuff it with prepared potato mixture and close the edges.
  • Dip the pav in prepared batter and coat it well.
  • Drop the vada pav in hot oil and fry it for a while until golden brown.
  • Transfer it to a serving dish, garnish it with green & red chutney, besan ka chura and fried chillies.
  • Serve hot.
