Ingredients

For Amritsari Mutton Curry

¼ cup Oil, तेल

1 cup Mustard oil, सरसों का तेल

1 inch Cinnamon stick, दालचीनी

3 no. Bay leaf, तेज पत्ता

3-4 no. Cloves, लौंग

5 no. large Onions, roughly sliced, प्याज

1 ½ kg Mutton with bones, मटन

2 tbsp Coriander powder, धनिया पाउडर

2 heaped tbsp Degi red chili powder, देगी लाल मिर्च पाउडर

½ tbsp Turmeric powder, हल्दी पाउडर

3-4 heaped tbsp Coriander powder, धनिया पाउडर

2 cups Curd, beaten, दही

3-4 cups Water, पानी

1 tbsp Prepared Masala, तयार किया हुआ मसाला

Salt to taste, नमक स्वादअनुसार

 

For Masala

2 heaped tbsp Black peppercorns, काली मिर्च के दाने

2-4 Cloves, लौंग

3 no. Black cardamom, बड़ी इलायची

1 no. Mace, जावित्री

1 tsp Cumin seeds, जीरा

12-15 no. Green cardamom, हरी इलायची

½ tsp Fennel seeds, सौंफ

1 tsp Coriander seeds, धनिये के बीज

Salt to taste, नमक स्वादअनुसार

¼ tsp Carom seeds, अजवायन

 

For Garnish

1 inch Ginger (peeled & julienne) अदरक

2 no. Green chillies (less spicy & diagonally sliced) हरी मिर्च

3-4 tbsp Coriander leaves & with stems, finely chopped, धनिया पत्ता

Process

For Amritsari Mutton Curry

  • In a handi, add oil, mustard oil, once it’s hot, add cinnamon stick, bay leaf, cloves, onions and saute it for a minute.
  • Add mutton with bones and saute for a while until onions are cooked well.
  • Add coriander powder, degi red chili powder, turmeric powder, coriander powder and cook it for a while.
  • Add curd and cook for 5-6 minutes on medium flames.
  • Add water to adjust the consistency, cover it with a lid and cook it for 30-40 minutes on medium flames.
  • Finish it with some prepared masala, salt to taste and cook for 5-6 minutes.
  • Transfer it to a serving bowl or dish, garnish it with ginger, green chillies, coriander leaves & stems.
  • Serve hot with roti or rice.

For Masala

  • In a pan, add black peppercorns, cloves, black cardamom, mace, cumin seeds, green cardamom, fennel seeds, coriander seeds, salt to taste and roast them for a while until it’s aromatic.
  • Transfer it to a tray, add carom seeds and mix it well.
  • Transfer it to a mixer grinder jar and grind it smoothly.
  • Keep it aside for further use.
