Ingredients
For Aloo Ki Sabji
2-3 tbsp Mustard oil, सरसों का तेल
1 no. Bay leaf, तेज़ पत्ता
1 tsp Cumin seeds, जीरा
2-4 no. Fenugreek seeds, मेथी दाना
½ tsp Fennel seeds, सौंफ़
2-3 no. Green chillies (less spicy & cut into half) हरी मिर्च
½ inch Ginger (peeled & chopped) अदरक
9-10 large Potatoes (peeled & medium diced) आलू
Salt to taste, नमक स्वादअनुसार
Little water, पानी
2-3 tbsp Prepared masala, तैयार किया हुआ मसाला
½ tbsp dry Mango powder, आमचूर पाउडर
2 tbsp fresh Coriander leaves, chopped, धनिया पत्ता
For Masala
2 tbsp Black peppercorns, काली मिर्च के दाने
1 tsp Cumin seeds, जीरा
3 no. Black cardamom, बड़ी इलायची
2-4 no. Cloves, लौंग
1 heaped tsp Coriander seeds, धनिये के बीज
1 no. Green cardamom, हरी इलायची
Salt to taste, नमक स्वादअनुसार
½ inch Cinnamon stick, दालचीनी
For Frying Chilli
2 tbsp Mustard oil, सरसों का तेल
4-5 no. Green chillies (less spicy & cut into half) हरी मिर्च
For Raita
Fried chillies, तली हुई मिर्च
2 cups Curd, beaten, दही
Salt to taste, नमक स्वादअनुसार
½ tsp Black peppercorns, crushed, कुटी हुई काली मिर्च
For Mirch Ki Puri
Prepared Dough, तैयार किया हुआ आटा
1 tsp Oil, तेल
A pinch of degi red chili powder, देगी लाल मिर्च पाउडर
Other Ingredients
Oil for frying, तलने के लिए तेल
For Garnish
Coriander sprig, धनिया पत्ता
A pinch of degi red chili powder, देगी लाल मिर्च पाउडर
A pinch of black peppercorns, crushed, कुटी हुई काली मिर्च
Fried chilli, तली हुई मिर्च
Process
For Aloo Ki Sabji
- In a kadai, add mustard oil, once it’s smoky hot, add bay leaf, cumin seeds, fenugreek seeds, fennel seeds, green chillies, ginger and let it splutter it for a minute.
- Add potatoes, salt to taste, little water and cook it for 10-12 minutes until cooked well.
- Finish it with prepared masala, dry mango powder, fresh coriander leaves and mix it well.
- Transfer it to a serving dish and garnish it with coriander sprig.
- Serve hot with puri and prepared raita.
For Masala
- In a pan, add black peppercorns, cumin seeds, black cardamom, cloves, coriander seeds, green cardamom, salt to taste, cinnamon stick and dry roast them for a while.
- Transfer it to a mixer grinder jar and grind it into fine powder.
For Frying Chilli
- In a pan, add mustard oil, once it’s smoky hot, add green chillies and fry them until light golden in colour.
- Transfer it to a bowl and mash it well.
- Keep it aside for further use.
For Raita
- Add mash chillies, curd, salt to taste, crushed black peppercorns and give it a good mix.
- Transfer it to a serving bowl, garnish it with a pinch of degi red chili powder, a pinch of crushed black peppercorns and fried chilli.
- Serve with puri and prepare aloo ki sabji.
For Mirch Ki Puri
- Take a prepared dough, divide it into medium lemon size balls, flatten with the help of a rolling pin and add a pinch of degi red chilli powder into the cavity.
- Flatten the puri, drop it into hot oil and fry them until golden in colour.
- Transfer it to an absorbent sheet and leave it aside for a while.
- Transfer it to a serving dish, serve hot with prepared aloo ki sabji and raita.
