People often ask me, what's the secret of a perfect Mohanthal. Simple, the quality of Besan. And for this Holi special Mohanthal, I chose Tata Sampann's trusted Besan(Gram Flour) and their range of dry fruits. Ingredients सही तो dish सही 😎
Ingredients
For Crumbled Gram Flour Mixture
500 gms Tata Sampann Gram flour
80 ml Milk
2 tbsp Ghee
For Sugar Syrup
1 ⅓ cups Sugar
1 ½ cups Water
For Mohanthal
1 ½ cups Ghee
Crumbled Gram flour mixture
200 ml Milk
Prepared sugar syrup
1 tsp Cardamom powder
A pinch of nutmeg, grated
⅓ cup Tata Sampann Cashews, sliver
⅓ cup Tata Sampann Almonds, chopped
For Garnish
Golden vark
Rose petals
Process
For Crumbled Gram Flour Mixture
- In a pan, add milk, ghee and give it a quick boil.
- In a handi, add Tata Sampann gram flour, pour the mixture and mix it well.
- Rub it with the help of hands for a while until crumbly in texture.
- Transfer it to a bowl and keep it aside to rest for 10-15 minutes.
- Sieve the mixture through the strainer and keep it aise for further use.
For Sugar Syrup
- In a handi, add sugar, water and simmer it for a while until thickens.
- Cook it until one string consistency and keep it aside for further use.
For Mohanthal
- In a kadai, add ghee, once it’s hot, add prepared crumble mixture and cook it for 2-3 minutes until golden in colour.
- Add milk and saute it for 4-5 minutes until golden brown.
- Add prepared sugar syrup and cook it well until the mixture thickens.
- Finish it with cardamom powder, nutmeg powder and mix it well.
- Transfer it to a tray and spread it evenly.
- In a pan, add tata sampann cashews, tata sampann almonds and dry roast it for a minute.
- Top it up on mohanthal and let it set for a while.
- Cut it into the desired shape and place it on the serving dish.
- Garnish it with golden vark and rose petals.
- Serve warm.
