For Tawa Achari Mutton
2-3 tbsp Ghee, рдШреА
1 medium Onion (finely chopped), рдкреНрдпрд╛рдЬ
2 no. Green Chillies (less spicy & finely chopped), рд╣рд░реА рдорд┐рд░реНрдЪ
1 tbsp Tender Coriander stems (finely chopped), рдзрдирд┐рдпрд╛ рдХреЗ рдбрдВрдард▓
3-4 large Tomatoes (puree), рдЯрдорд╛рдЯрд░ рдкреНрдпреВрд░реА
1 inch Ginger (peeled & julienned), рдЕрджрд░рдХ

1-2 tsp Prepared Achari Masala, рддреИрдпрд╛рд░ рдХрд┐рдпрд╛ рд╣реБрдЖ рдЕрдЪрд╛рд░реА рдорд╕рд╛рд▓рд╛
2-3 tbsp fresh Coriander leaves (finely chopped), рдзрдирд┐рдпрд╛ рдкрддреНрддрд╛
For Garnish

Process
For Cooking Mutton
- In a pressure cooker, add mustard oil, once it’s smoky hot, add bay leaf, black cardamom, mutton and saute for a minute.
- Add nigella seeds, fennel seeds, cumin seeds, small mustard seeds and give it a good mix.
- Add onions, salt to taste and let it cook for 7-8 minutes or until onion gets light brown in colour.
- Add prepared curd mixture and cook for another 4-5 minutes until oil separates from the masala.
- Add water to adjust the consistency, give it a good mix, cover it with the lid and allow to cook for 7-8 whistles or until it’s tender.
- Once mutton gets cooked then keep it aside to depressurize the cooker.
For Achari Masala
- In a tray, add degi red chilli powder, turmeric powder, black cardamom, green cardamom, black peppercorns, coriander seeds, coriander powder.
- Add cumin seeds, fennel seeds, fenugreek seeds, small mustard seeds, dry mango powder, nigella seeds and give it a good mix.
- Transfer it into the mixer grinder jar and grind it into the smooth fine powder.
- Keep it aside for further use.
For Curd Mixture
- In a bowl, add curd, prepared achari masala, ginger garlic paste and give it a good mix.
- Keep it aside for further use.
For Tawa Achari Mutton
- In a tawa, add ghee, once it’s hot, add onion, green chillies, tender coriander stems and cook for 2-3 minutes until onion gets translucents in texture.
- Add tomato puree, ginger and cook for another 4-5 minutes or until it’s cooked.
- Add prepared achari masala, onion and cook for a while.
- Add water, cook mutton and let it cook for 7-8 minutes.
- Now, add bhavnagri chillies, tomatoes, prepared achari masala, cover it with cooking foil or lid and let it cook for a while.
- Open the lid and finish it with fresh coriander leaves and give it a good mix.
- Transfer it into the serving dish and garnish it with coriander sprig.
- Serve hot with roti.
