Ingredients

For Dhaba Style Paneer Lababdar

2 tbsp Oil, तेल

1 large Onion (cut into cubes), प्याज

2-3 no. Green Chillies (less spicy & roughly chopped), हरी मिर्च

1 tbsp Ginger Garlic paste, अदरक लहसुन का पेस्ट

2 medium Tomatoes (roughly chopped), टमाटर

¾ cup Curd (beaten), दही

1 heaped tbsp Coriander powder, धनिया पाउडर

½ tsp Turmeric powder, हल्दी पाउडर

1 heaped tbsp Degi Red Chilli powder, देगी लाल मिर्च पाउडर

¼ tsp Cumin powder, जीरा पाउडर

2-3 medium Tomatoes (puree), टमाटर प्यूरी

1 inch Ginger (peeled & julienned), अदरक

1 cup Water, पानी

Salt to taste, नमक स्वादअनुसार

½ tsp Sugar, चीनी

1 cup Water, पानी

2-3 heaped tbsp Fresh cream, ताज़ा मलाई

Sauteed Paneer & Vegetables, भुना हुआ पनीर और सब्जियां

 

For Sauteing Paneer & Vegetables

2 tbsp Oil, तेल

800 gms Paneer (cut into dices), पनीर

1 medium Onion (cut into dices), प्याज

1 large Capsicum (cut into dices), शिमला मिर्च

2 medium Tomatoes (cut into dices), टमाटर

1 tbsp Degi Red Chilli powder, देगी लाल मिर्च पाउडर

Salt to taste, नमक स्वादअनुसार

½ tbsp Dry Fenugreek leaves (crushed), कसूरी मेथी

1 tbsp Tender Coriander stems (finely chopped), धनिया के डंठल

 

For Garnish

Fresh cream, ताज़ा मलाई

Dry Fenugreek leaves (crushed), कसूरी मेथी

Coriander sprig, धनिया पत्ता

Process

For Dhaba Style Paneer Lababdar

  • In a handi, add oil, once it’s hot, add onion, green chillies and cook for 2-3 minutes.
  • Add ginger garlic paste, tomato, curd, coriander powder, turmeric powder, degi red chilli powder, cumin powder and cook for another 4-5 minutes.
  • Add tomato puree, ginger and let it cook for a while until oil separates from the masala.
  • Add water, salt to taste, sugar, water and let it simmer for a while.
  • Add fresh cream, sauteed paneer & vegetables and allow to cook for another 4-5 minutes.
  • Transfer it into the serving dish and garnish it with fresh cream, crushed dry fenugreek leaves and coriander sprig.
  • Serve hot with roti or naan.

 

For Sauteing Paneer & Vegetables

  • In a pan, add oil, once it’s hot, add paneer and fry the paneer on all sides until light brown in colour.
  • Add onion, capsicum, tomatoes, degi red chilli powder, salt to taste, crushed dry fenugreek leaves, tender coriander stems and toss it on high flames for 2-3 minutes.
  • Turn off the flames and keep it aside for further use.
