Ingredients

For Amla Paste

250 gms Gooseberries (roughly chopped), आंवला

¼ inch Mango Ginger (roughly chopped), आंबेहळद

1 ½ cups Sugar, चीनी

1-2 cups Water, पानी

¼ inch Ginger (peeled & roughly chopped), अदरक

1 tsp Fennel Seeds, सौंफ

1 cup Jaggery, गुड़

 

For Ragi Mixture

2 cups Water, पानी

¾ cup Ragi flour, रागी का आटा

 

For Cooking Rice

1 cup Kolam Rice, कोलम चावल

2-3 cups Water, पानी

 

For Ragi Ambala

1 medium Onion (chopped), प्याज

2 no. Green Chillies (less spicy & finely chopped), हरी मिर्च

2 tbsp fresh Coriander leaves (finely chopped), धनिया पत्ता

Cooked Ragi mixture, पका हुआ रागी का मिश्रण

4-5 no. Ice cubes, बर्फ के टुकड़े

1-2 cups Curd (beaten), दही

1-2 cups Water, पानी

Salt to taste, नमक स्वादअनुसार

1 tsp Lemon juice, नींबू का रस

 

For Torani Paste

3-4 no. Lemon leaves (roughly torn),

½ inch Mango Ginger (peeled & sliced), आंबेहळद

1 no. Green Chilli (chopped), हरी मिर्च

 

For Fermentation

Cooked Rice, पका हुआ चावल

4-5 cups Water, पानी

 

For Tanka Torani

Fermented Rice Water, खमीरी चावल का पानी

1 cup Curd (beaten), दही

Prepared Torani Paste, तैयार की हुई तोरानी का पेस्ट

1-2 sprig Curry leaves (roughly torn), कड़ी पत्ता

1 no. fresh Red Chilli (chopped), ताज़ी लाल मिर्च

2 no. Lemon (sliced), नींबू

1 tsp Lemon juice, नींबू का रस

Salt to taste, नमक स्वादअनुसार

½ tsp Cumin powder, जीरा पाउडर

 

For Amla Sharbat

1 no. Gooseberry (grated), आंवला

¼ inch Ginger (peeled & grated), अदरक

½ tsp Black Peppercorns (crushed), कुटी हुई काली मिर्च

Prepared Amla Paste, तैयार की हुई आंवला पेस्ट

4-5 no. Ice cubes, बर्फ के टुकड़े

Water as required, पानी

A pinch of Salt, नमक

1-2 tbsp fresh Mint leaves (roughly torn), पुदीने का पत्ता

 

For Garnish

Lemon slices, नींबू

Mint sprig, पुदीने का पत्ता

Ice cubes, बर्फ के टुकड़े

Process

For Amla Paste

  • In a sauce pot, add gooseberries, mango ginger, sugar, water, ginger, fennel seeds, jaggery, cover it with the lid and cook for 12-15 minutes or until everything is cooked.
    Transfer it into the bowl and leave it aside to cool down the temperature.
  • Transfer it into the mixer grinder jar and grind it into a smooth fine paste.
  • keep it aside for further use.

 

For Ragi Mixture

  • In a sauce pan, add water, ragi flour and cook it on low flames for a while until it is properly cooked.
  • Transfer it into the bowl and keep it aside for further use.

 

For Cooking Rice

  • In a saucepot or handi, add kolam rice, water, cover it with the lid and cook for 20-25 minutes until rice gets mushy in texture.
  • Transfer it to a bowl and leave it aside for further use.

 

For Ragi Ambala

  • In a serving bowl, add onion, green chillies, fresh coriander leaves, cooked ragi mixture and give it a good mix.
  • Add ice cubes, curd, water, salt to taste, lemon juice and give it a good mix.
  • Transfer it into the serving glass and serve chilled.

 

For Torani Paste

  • In a mortar pestle, add lemon leaves, mango ginger, green chilli and grind it into a coarse paste.
  • Keep it aside for further use.

 

For Fermentation

  • In a clay pot, add cooked rice, sufficient water and cover it with a muslin cloth and keep it aside for fermentation for 1 day or at least 18-20 hours.

 

For Tanka Torani

  • In a clay pot, add fermented rice water, curd, prepared torani paste, curry leaves, fresh red chilli, lemon, lemon juice, salt to taste, cumin powder and give it a good mix.
  • Transfer it into the serving glass or clay glass and serve chilled.

 

For Amla Sharbat

  • In a serving bowl or jar, add grated gooseberry, ginger, crushed black peppercorns.
  • Add prepared amla paste, ice cubes, water as required, a pinch of salt, fresh mint leaves and mix everything well.
  • Transfer it into the serving glass, garnish it with lemon slices, mint sprig and ice cubes.
    Serve chilled.
