Ingredients
For Stuffing
2 tbsp Oil, तेल
3 inch Ginger (peeled & finely chopped) अदरक
4-5 no. Green chillies (less spicy & chopped) हरी मिर्च
5-6 medium Boiled potatoes, roughly chopped, उबले हुए आलू
1 medium Boiled potato, roughly chopped, उबल हुआ आलू
2 heaped tbsp Prepared dry masala, तैयार किया हुआ मसाला
1 tbsp Ghee, घी
1 tsp dry Mango powder, आमचूर पाउडर
For Dry Masala
Salt to taste, नमक स्वादअनुसार
1 ½ tbsp Cumin seeds, जीरा
1 heaped tbsp Coriander seeds, धनिये के बीज
2 heaped tbsp Black peppercorns, काली मिर्च के दाने
5-6 no. Cloves, लौंग
5-6 no. Black cardamom, बड़ी इलायची
½ tbsp Fennel seeds, सौंफ़
For Slurry
1 cup Refined flour, मैदा
Salt to taste, नमक स्वादअनुसार
¼ tsp Turmeric powder, हल्दी पाउडर
½ tsp Degi red chili powder, देगी लाल मिर्च पाउडर
½ cup Water, पानी
Other Ingredients
14-15 no. Bread slices, ब्रेड स्लाइस
Breadcrumbs, ब्रेडक्रम्ब्स
Oil for frying, तलने के लिए तेल
4-5 no. Green chillies, हरी मिर्च
For Garnish
Fried chillies, तली हुई मिर्च
Process
For Stuffing
- In a kadai, add oil, once it’s hot, add ginger, green chillies and saute it for a minute.
- Add boiled potatoes, prepared dry masala and cook it for 5-6 minutes on medium flames.
- Finish it with ghee, dry mango powder and give it a good mix.
- Transfer it to a bowl or tray and keep it aside for further use.
For Dry Masala
- In a pan, add salt to taste, cumin seeds, coriander seeds, black peppercorns, cloves, black cardamom, fennel seeds and dry roast it for 2-3 minutes or until aromatic.
- Transfer it to a mixer grinder jar and grind it into fine powder.
- Keep it aside for further use.
For Slurry
- In a bowl, add refined flour, salt to taste, turmeric powder, degi red chili powder, water and give it a good mix.
- Keep it aside for further use.
For Lucknowi Khasta Kachori
- Take bread slices, cut the bread with the help of any shape of cutter in any desired shape.
- Apply water on bread edges and stuff with prepared stuffing.
- Apply prepared slurry on all sides and seal the edges.
- Add it to the breadcrumbs and coat it well on all sides.
- Heat oil in kadai, add prepared kachoris and fry them until golden in colour.
- Transfer it to an absorbent sheet and leave it aside for a while.
- Transfer it to a serving dish and garnish it with fried chillies.
- Serve hot with mint chutney and tamarind chutney.
