Rasam Vada सर्दियों में बनाएं चटपटा रसम वड़ा सूप unique Soup recipe
Rasam is an any time favorite right? In fact it is an artisanal soup that is heart warming throughout the year. Here's my recipe for the famous Rasam vada
Ingredients
For Boiling Dal
4-5 cups Water for boiling, पानी
2 cups Toor dal, तूर दाल
Salt to taste, नमक स्वादअनुसार
½ tsp Turmeric powder, हल्दी पाउडर
For Rasam Powder
2 tbsp Oil, तेल
1 heaped tbsp Chana dal, चना दाल
4-5 no. dry Kashmiri red chillies, सूखी कश्मीरी लाल मिर्च
2-3 sprig Curry leaves, roughly torn, कड़ी पत्ते
1 heaped tbsp Urad dal, उड़द दाल
3 tbsp Coriander seeds, धनिये के बीज
2 tsp Cumin seeds, जीरा
¼ tsp Fenugreek seeds, मेथी दाना
1 tbsp Black peppercorns, काली मिर्च के दाने
1 heaped tsp Degi red chili powder, देगी लाल मिर्च पाउडर
¼ tsp Turmeric powder, हल्दी पाउडर
Salt to taste, नमक स्वादअनुसार
For Vada Mixture
1 cup Semolina, सूजी
Salt to taste, नमक स्वादअनुसार
½ cup Curd, beaten, दही
¼ cup Water, पानी
Prepared Tadka, तैयार किया हुआ तड़का
¼ tsp Baking soda, बेकिंग सोडा
For Tadka
1 ½ tbsp Oil, तेल
½ tsp small Mustard seeds, छोटी राई
1 sprig Curry leaves, कड़ी पत्ते
1 ½ tsp Urad dal, उड़द दाल
1 tbsp Tender Coriander stems, finely chopped, धनिये के डंठल
1 inch Ginger (peeled & finely chopped) अदरक
3 no. Green chillies (less spicy & chopped) हरी मिर्च
For Rasam
2 tbsp Oil, तेल
½ tsp small Mustard seeds, छोटी राई
5-6 no. Button chillies, बटन मिर्च
2 sprig Curry leaves, कड़ी पत्ते
2 no. Garlic cloves, crushed, लहसुन
3 large Tomatoes, roughly chopped, टमाटर
Salt to taste, नमक स्वादअनुसार
2 heaped tbsp Prepared Rasam powder, तैयार किया हुआ रसम पाउडर
½ tbsp Tender Coriander stems with roots, finely chopped, धनिये के डंठल और जड़ें
Toor Dal Water, तूर दाल का पानी
Salt to taste, नमक स्वादअनुसार
1 tbsp Jaggery, गुड़
For Finishing
1 ½ medium Tomatoes, roughly chopped, टमाटर
¼ cup fresh Coriander leaves, roughly chopped, धनिया पत्ता
2 sprig Curry leaves, कड़ी पत्ते
Salt to taste, नमक स्वादअनुसार
1 tsp Black peppercorns, crushed, कुटी हुई काली मिर्च
2 tsp Lemon juice, नींबू का रस
Other Ingredients
Oil for frying, तलने के लिए तेल
For Garnish
Lemon wedge, नींबू की फांक
Coriander sprig, धनिया पत्ता
¼ tsp Black peppercorns, crushed, कुटी हुई काली मिर्च
Process
For Boiling Dal
- In a sauce pot or handi, add water, toor dal, salt to taste, turmeric powder and mix it well.
- Let it simmer for 30-40 minutes on medium flame until cooked well.
- Strain the dal and keep it aside for further use. Keep the dal water aside for rasam.
For Rasam Powder
- In a pan, add oil, once it’s hot, add chana dal, dry kashmiri red chillies, curry leaves, urad dal and toss it for a minute.
- Add coriander seeds, cumin seeds, fenugreek seeds, black peppercorns and toss it for another 2-3 minutes.
- Add degi red chili powder, turmeric powder, salt to taste and mix it well.
- Transfer it to a mixer grinder jar and grind it into fine powder.
- Keep it aside for further use.
For Vada Mixture
- In a bowl, add semolina, salt to taste, curd, mix it well and leave it aside to rest for 10 minutes.
- Add water to adjust the consistency, prepared tadka, baking soda and give it a good mix.
- Keep it aside to rest for 5-6 minutes.
- Take non-stick kadai, add oil, once it’s hot, drop lemon sized balls vada mixture in hot oil and fry them until golden in color.
- Transfer it to an absorbent paper and keep it aside for further use.
For Tadka
- In a pan, add oil, once it’s hot, add small mustard seeds, curry leaves and let it splutter well.
- Add urad dal, tender coriander stems, ginger, green chillies and saute for 2-3 minutes.
- Keep it aside for further use.
For Rasam
- In a handi or sauce pot, add oil, once it’s hot, add small mustard seeds, button chillies, curry leaves, garlic and saute it for a minute.
- Add tomatoes, salt to taste and cook it for a while until cooked well.
- Add prepared rasam powder, tender coriander stems and saute it well.
- Add toor dal water, salt to taste, jaggery and simmer it for 10-15 minutes on low flame.
- Finish it with a prepared finishing mixture and give it a good mix.
- Transfer it to a serving bowl, add fried vada, garnish it with lemon wedge, coriander sprig and crushed black peppercorns.
- Serve hot.
For Finishing
- In a bowl, add tomatoes, coriander leaves, curry leaves, salt to taste, crushed black peppercorns, lemon juice and give it a good mix.
- Keep it aside for further use.
