
Ingredients
Mirchi Vada is one of the winter speciality snack from Rajasthan, it is made by stuffing the chillies with potatoes and spices, sometimes even cauliflower.
For Stuffing
10-12 bhavnagri chillies, washed and crown removed
5 medium potatoes, boiled and mashed
3 green chillies, chopped
1 tsp fennel seeds, crushed
1 tsp coriander powder
1 tsp dry mango powder (amchur)
½ tsp cumin powder
1 tbsp achari masala
Pinch of asafoetida (hing)
Salt to taste
For Batter
2 cups gram flour
1 cup water
Pinch of asafoetida (hing)
Pinch of baking soda
Salt to taste
Process
- Slit all the chillies from one side and remove the seeds, set aside till in use.
- Prepare the stuffing for the chillies, add mashed potatoes, green chilli, fennel seeds, coriander powder, dry mango powder, cumin powder and achaari masala to a bowl and mix well.
- Stuff the prepared potato mixture into the slit green chillies and set aside till in use.
- Prepare the batter for the vada, add gram flour, salt, asafoetida, baking soda and water to a bowl, mix well to form a lump free batter.
- Coat the stuffed chillies into the prepared batter and deep-fry till golden brown.
- Drain on an absorbent paper.
- Serve hot with choice of chutney or tomato ketchup.
