Ingredients
For Lemon Rice
2 tbsp Oil, तेल
1 tsp small Mustard seeds, बारीक राई
1 ½ tsp Urad dal, उड़द की दाल
½ tbsp Chana dal, चना दाल
2 no. dry Red chillies, broken into half, सूखी लाल मिर्च
2 tbsp Peanuts, मूंगफली
10-12 no. Cashew nuts, काजू
2 no. Green chillies (less spicy & cut into diagonally) हरी मिर्च
2 sprig Curry leaves, कड़ी पत्ता
½ tsp Turmeric powder, हल्दी पाउडर
3-4 tbsp Lemon juice, नींबू का रस
½ tsp Sugar (optional) चीनी
3-4 cups Leftover cooked rice, पके हुए चावल
Salt to taste, नमक स्वादअनुसार
1 ½ tsp Lemon juice, नींबू का रस
1 sprig Curry leaves, roughly torn, कड़ी पत्ता
A pinch of salt, नमक
¼ cup Water, पानी
For Rice Vada Mixture
⅓ cup Curd, beaten, दही
3 tbsp Semolina, सूजी
2 no. Green chillies (less spicy & chopped) हरी मिर्च
1 inch Ginger (peeled & finely chopped) अदरक
2 ½ cups prepared Lemon rice, तैयार किया हुआ लेमन राइस
2 sprig Curry leaves, roughly chopped, कड़ी पत्ता
Other Ingredients
Oil for frying, तलने के लिए तेल
3 no. Green chillies, slit into middle, हरी मिर्च
10-12 no. Cashew Nuts, काजू
For Garnish
fried Cashew Nuts, तले हुए काजू
fried Red chilies, तली हुई सूखी लाल मिर्च
fried Curry leaves, तले हुए कड़ी पत्ता
Process
For Lemon Rice
- In a wok or kadai, add oil, once it’s hot, add small mustard seeds and let it splutter well.
- Add urad dal, chana dal, dry red chillies, peanuts, cashew nuts and saute it well until golden in color.
- Add green chillies, curry leaves, turmeric powder and saute it for a minute.
- Add lemon juice, sugar, leftover cooked rice, salt to taste and give it a good mix.
- Finish it with lemon juice, curry leaves, a pinch of salt, water and cover it with the lid and let it cook for a while.
- Transfer it to the serving dish, garnish it with fried cashew nuts, fried red chillies and fried curry leaves.
- Serve hot.
For Rice Vada Mixture
- In a bowl, add curd, semolina and leave it aside for 4-5 minutes.
- Add green chillies, ginger, prepared lemon rice, curry leaves and mix it well.
- Divide the mixture into small lemon size balls and give it a desired shape.
- Keep it aside for further use.
For Frying
- In a non-stick kadai, add oil, once it’s hot, add prepared vada and fry until golden brown.
- Transfer it to an absorbent paper and keep it aside for further use.
- In the same kadai, add green chillies and fry it for a minute.
- Add cashew nuts and fry it for a minute until golden in color.
- Transfer it to an absorbent paper and keep it aside for further use.
