Ingredients
For Frying Onions
¼ cup Oil, तेल
⅓ cup Mustard oil, सरसों का तेल
3 large Onions, sliced, प्याज
For Paste
2 large Tomatoes, roughly chopped, टमाटर
1 ½ inch Ginger (peeled & roughly chopped) अदरक
2 no. Green chillies (less spicy & roughly chopped) हरी मिर्च
Salt to taste, नमक स्वादअनुसार
¾ cup Curd, beaten, दही
1 heaped tbsp Degi red chili powder, देगी लाल मिर्च पाउडर
1 ½ tbsp Coriander powder, धनिया पाउडर
1 ½ tsp Turmeric powder, हल्दी पाउडर
½ tsp Cumin powder, जीरा पाउडर
1 heaped tbsp Tender coriander stems with roots, roughly chopped, धनिये के डंठल
Fried onions, तले हुए प्याज
For Chicken Marination
1 kg Chicken (with thigh & bones) चिकन
1 ½ tbsp Mustard oil, सरसों का तेल
Salt to taste, नमक स्वादअनुसार
½ tbsp Coriander powder, धनिया पाउडर
½ tsp Turmeric powder, हल्दी पाउडर
2 tsp Degi red chili powder, देगी लाल मिर्च पाउडर
1 tbsp Ginger Garlic paste, अदरक लहसुन का पेस्ट
For Frying Chicken
Remaining excess oil, बचा हुआ तेल
Marinated chicken, मैरीनेटेड चिकन
For Dhaba Style Chicken
2-3 tbsp Remaining excess oil, बचा हुआ तेल
Prepared paste, तैयार किया हुआ पेस्ट
Fried chicken, तला हुआ चिकन
1 inch smoked Cinnamon stick, दालचीनी
2-3 cups Water, पानी
½ inch Ginger (peeled & julinned) अदरक
2 tbsp fresh Coriander leaves, finely chopped, धनिया पत्ता
For Garnish
Coriander sprig, धनिया पत्ता
Ginger julienne, अदरक के लच्छे
Process
For Frying
- In a handi, add oil, mustard oil, once it’s hot, add onions and fry them for 7-8 minutes until golden in color.
- Transfer it to an absorbent paper and keep it aside for further use.
For Paste
- In a bowl, add tomatoes, ginger, green chillies, salt to taste, curd, degi red chili powder, coriander powder, turmeric powder, cumin powder, tender coriander stems with roots and fried onions.
- Transfer it to a mixer grinder jar and grind it into a smooth paste.
- Keep it aside for further use.
For Chicken Marination
- In a bowl, add chicken, mustard oil, salt to taste, coriander powder, turmeric powder, degi red chili powder, ginger garlic paste and give it a good mix.
- Keep it aside to marinate for 10 minutes.
For Frying Chicken
- In the same handi, add remaining excess oil, once it’s hot, add marinated chicken and cook for 5-6 minutes until half cooked.
- Transfer it to a tray and keep it aside for further use.
For Dhaba Style Chicken
- In the same handi, add remaining excess oil, once it’s hot, add prepared paste and cook it for a while.
- Add fried chicken, smoked cinnamon stick, water, cover it with a lid and cook it for 10-15 minutes on medium flames.
- Finish it with some ginger, fresh coriander leaves and mix well.
- Transfer it to a serving dish, garnish it with coriander sprig and ginger julienne.
- Serve hot with roti or naan.
