
Dhaba Style Paneer Masala & Pickled Onion ढाबे जैसा पनीर मसाला और सिरके वाले प्याज़
Ingredients
4 medium size Onions, chopped, प्याज
For Marination
400 gms Paneer, cubes, पनीर
Salt to taste, नमक स्वादानुसार
1 tsp Degi red chilli powder, देगी लाल मिर्च पाउडर
½ tsp Turmeric powder, हल्दी पाउडर
½ cup Emami Smart Balance Oil for frying, तलने के लिए इमामी स्मार्ट बैलेंस तेल
For Ginger Garlic Paste
1 ½ inch Ginger, अदरक
4-5 Garlic cloves, लहसुन
2 Green chilli, broken, हरी मिर्च
Salt to taste, नमक स्वादानुसार
For Tempering
Remaining Emami smart balance oil, इमामी स्मार्ट बैलेंस तेल
3-4 Dry red chilli, सुखी लाल मिर्च
2 Cloves, लॉन्ग
4-5 Black Peppercorns, काली मिर्च के दाने
1 tsp Cumin seeds, जीरा
Prepared ginger garlic paste, तैयार किया हुआ अदरक लहसुन का पेस्ट
1 heaped tsp Degi red chilli powder, देगी लाल मिर्च पाउडर
½ tsp Turmeric powder, हल्दी पाउडर
1 heaped tsp Coriander powder, धनिया पाउडर
½ cup fresh Tomato puree, ताज़े टमाटर की प्यूरी
Salt to taste, नमक स्वादानुसार
¾ tsp Prepared paneer masala, तैयार किया हुआ मसाला
Fried paneer, तला हुआ पनीर
For Paneer Masala
1 tbsp Cumin seeds, जीरा
2 Coriander seeds, धनिया की बीज
2-4 Cloves, लॉन्ग
½ tsp Black Peppercorns, काली मिर्च के दाने
2 Black cardamom, बड़ी इलायची
1 Green cardamom, हरी इलायची
½ inch Cinnamon stick, दालचीनी
For Sirka Pyaz
1 cup Vinegar, सिरका
1 medium size Beetroot, small cube, चुकंदर
1 Bay leaf, तेजपत्ता
Salt to taste, नमक स्वादानुसार
2 tsp Sugar, चीनी
5-10 Shallots, pelled, छोटा प्याज़
½ inch Ginger, pelled, अदरक
For Garnish
Coriander leaves, धनिया पत्ता
Process
For Marination
- In a bowl, add paneer, degi red chilli powder, turmeric powder, salt to taste and mix everything well.
For Frying Paneer
- Heat emami healthy and smart balanced oil in a kadai, onces its medium hot add paneer cubes and fry on medium flame until crisp.
- Remove in an absorbent paper and keep it aside for future use.
For Ginger Garlic Paste
- In a motarpestel, add ginger, garlic cloves, green chilli, salt to taste and make a smooth paste out of it.
For Tempering
- Once the oil is medium hot, add dry red chilli, cloves, black peppercorns, cumin seeds let it splutter.
- Add onion and saute until translucent.
- Add prepared ginger garlic paste and saute it well.
- Add degi red chilli powder, turmeric powder, coriander powder and saute until the row smell goes away.
- Add tomato puree and mix everything well.
- Add salt to taste and cook for 5 minutes.
- Now, add prepared paneer masala and fried paneer mix everything well.
- Garnish it with coriander leaves and serve hot with sirka pyaz.
For Paneer Masala
- In a pan, add cumin seeds, coriander seeds, cloves, black peppercorns, black cardamom, green cardamom, cinnamon stick dry roast the spices.
- Onces its cool down transfer it into a grinder and grind it into a fine powder,
- Keep it aside for future use.
For Sirka Pyaz
- In a heavy bottom pan, add vinegar and give it a boil.
- Add beetroot, bay leaf, salt to taste, sugar, shallots.
- Add ginger and give it a boil.
- Onces it’s at room temperature, transfer it into a jar and use it later.
