Ingredients
For Gravy
¼ cup Oil, तेल
7-8 no. dry Kashmiri red chillies, सूखी कश्मीरी लाल मिर्च
5-6 no. Garlic cloves, लहसुन
2 large Onions, roughly chopped, प्याज
1 tbsp Ginger Garlic paste, अदरक लहसुन का पेस्ट
3 large Tomatoes, roughly chopped, टमाटर
Salt to taste, नमक स्वादअनुसार
½ tsp Sugar, चीनी
1 tbsp Degi red chili powder, देगी लाल मिर्च पाउडर
½ tbsp Turmeric powder, हल्दी पाउडर
½ cup Water, पानी
2 tsp Coriander powder (optional) धनिया पाउडर
7-8 no. Cashew Nuts, काजू
3 tbsp Butter, cubed, मक्खन
For Kadai Masala
2 tbsp Black peppercorns, काली मिर्च के दाने
2 tbsp Coriander seeds, धनिये के बीज
½ tbsp Cumin seeds, जीरा
1 tsp Fennel seeds, सौंफ़
Salt to taste, नमक स्वादअनुसार
1 ½ tbsp Chilli flakes, कुटी हुई लाल मिर्च
For Paneer Marination
800 gms Paneer, cut into slab, पनीर
Salt to taste, नमक स्वादअनुसार
A pinch of degi red chili powder, देगी लाल मिर्च पाउडर
For Frying
2 tbsp Oil, तेल
Marinated paneer, मैरीनेटेड पनीर
For Kadai Paneer
2 tbsp Butter, cubed, मक्खन
2 medium Onions, cut into quarters, प्याज
Prepared gravy, तैयार की हुई ग्रेवी
1 heaped tsp Degi red chilli powder, देगी लाल मिर्च पाउडर
1 cup Water, पानी
Fried Paneer, cut into fingers, तला हुआ पनीर
Prepared sauteed vegetables, भूनी हुई सब्जियाँ
1 tbsp prepared Kadai Masala, तैयार किया हुआ कढ़ाई मसाला
2 tbsp fresh Coriander leaves, finely chopped, धनिया पत्ता
1 inch Ginger (peeled & julinned) अदरक
2 tsp Lemon juice, नींबू का रस
1 tbsp fresh Coriander leaves, finely chopped, धनिया पत्ता
For Sauteing Vegetables
2 tbsp Oil, तेल
1 medium Onions, cut into quarters, प्याज
1 large Capsicum, cut into diced, शिमला मिर्च
½ large Yellow bell pepper, cut into diced, पीली शिमला मिर्च
½ large Red bell pepper, cut into diced, लाल शिमला मिर्च
Salt to taste, नमक स्वादअनुसार
2 medium Tomatoes, cut into diced, टमाटर
1 tsp Butter, cubed, मक्खन
1 tsp Degi red chili powder, देगी लाल मिर्च पाउडर
2 tbsp prepared Kadai Masala, तैयार किया हुआ कढ़ाई मसाला
For Garnish
Coriander sprig, धनिया पत्ता
Process
For Gravy
- In a handi, add oil, once it’s hot, add dry kashmiri red chillies, garlic and saute it for a minute.
- Add onions, ginger garlic paste and saute it well until onions are translucent.
- Add tomatoes, salt to taste, sugar, degi red chili powder, turmeric powder, water and cook it for 5-6 minutes.
- Add coriander powder, cashew nuts, butter and mix it well.
- Cover it with a lid and let it cook for 10-12 minutes until cooked well.
- Transfer it to a bowl and let it cool at room temperature.
- Transfer the mixture in a mixer grinder jar and grind it into smooth paste.
- Keep it aside for further use.
For Kadai Masala
- In a pan, add black peppercorns, coriander seeds, cumin seeds, fennel seeds, salt to taste and dry roast it for a while until aromatic.
- Transfer it to a mortar pestle, add chilli flakes and grind it into a coarse paste.
- Keep it aside for further use.
For Paneer Marination
- In a bowl, add paneer, salt to taste, a pinch of degi red chilli powder and mix it well.
- Keep it aside to marinate for a while.
For Frying
- In a pan, add oil, once it’s hot, place marinated paneer and fry them until golden in colour.
- Transfer it to an absorbent sheet and keep it aside for further use.
For Kadai Paneer
- In a kadai or handi, add butter, once it melts, add onions and saute it for a minute.
- Add prepared gravy, degi red chili powder, water and simmer it for 7-8 minutes on medium flames.
- Add fried paneer, sauteed vegetables, prepared kadai masala and cook it for a while.
- Finish it with fresh coriander leaves, ginger, lemon juice, fresh coriander leaves and give it a good mix.
- Transfer it to a serving dish and garnish it with coriander sprig.
- Serve hot with roti or naan.
For Sauteing Vegetables
- In a pan, add oil, once it’s hot, add onions and toss it on high flames for a minute.
- Add capsicum, yellow bell pepper, red bell pepper, salt to taste and saute it well.
- Add tomatoes, butter, degi red chili powder, prepared kadai masala and toss it for a minute on high flames.
- Keep it aside for further use.
