
Dhaba Anda Masala ढाबा अंडा मसाला झटपट no peeling no boiling Eggs for quick recipe
This dish can be both a treat and a lazy lunch, honest! Sometimes, nothing can be more comforting than a spicy Egg/ Anda curry masala...Sunday ho ya Monday, zaroor khayein Ande!!
Ingredients
For Ginger Garlic Paste
3 Green chillies, हरी मिर्च
½ inch Ginger, peeled, slice, अदरक
4-5 Garlic cloves, लहसुन
For Egg Masala
2-3 tbsp Ghee, घी
1 ½ tbsp Oil, तेल
1 tsp Cumin seeds, जीरा
Prepared Ginger Garlic paste, अदरक लहसुन का पेस्ट
3 medium size Onion, chopped, प्याज
1 heaped tbsp Coriander powder,धनिया पाउडर
2 tsp Degi red chilli powder, देगी लाल मिर्च पाउडर
½ tsp Turmeric powder, हल्दी पाउडर
Salt to taste, नमक स्वादअनुसार
3 medium size Tomato, chopped, टमाटर
Salt to taste, नमक स्वादअनुसार
½ tsp Sugar, चीनी
Little water, पानी
1 tsp Dry fenugreek leaves, crushed, कसूरी मेथी
1 tbsp fresh Coriander leaves, chopped, धनिया पत्ता
Salt to taste, नमक स्वादअनुसार
For Egg Cake
8 no. whole Eggs, अंडे
Salt to taste, नमक स्वादअनुसार
½ tsp Turmeric powder, हल्दी पाउडर
1 tsp Degi red chilli powder, देगी लाल मिर्च पाउडर
½ tsp Ghee, घी
Other Ingredients
Ghee (for greasing) घी
Water (for steaming) पानी
For Garnish
Coriander sprig, धनिया पत्ता
Process
For Ginger Garlic Paste
- In a mortar pestle, add green chillies, ginger, garlic,cloves and grind it into a rough paste and keep aside for further use.
For Egg Masala
- In a shallow pan, add ghee, oil and once it’s hot, add prepared ginger garlic paste, cumin seeds and let it splutter well.
- Add onion and saute until it’s translucent. Add coriander powder, degi red chilli powder, turmeric powder and saute it well.
- Add salt to taste, tomatoes, sugar and mix it well. Cover it with the lid and cook on low flame.
- Once the tomatoes are soft, add water and mix it well. Cover it with the lid and cook for 5 minutes.
- Add crushed dry fenugreek leaves, coriander leaves and mix it well.
- Once done, transfer it into a serving dish, place the prepared egg cake on top.
- Garnish it with coriander sprig and serve hot.
For Egg Cake
- In a bowl break eggs, add salt to taste, turmeric powder, degi red chilli powder, ghee and whisk it well.
For Steaming
- Take a medium size bowl, pour the egg mixture into the bowl and let it steam for 10 minutes.
- Or until it’s properly done.
- Remove it from the pan, demould the egg cake and cut into desired shape.
