Ingredients

For Dough

350 gms Refined flour, मैदा

Salt to taste, नमक स्वादअनुसार

Water as required, पानी

1 tsp Oil, तेल

 

For Cooking Matara

⅓ cup Mustard oil, सरसों का तेल

1 tsp Cumin seeds, जीरा

4-5 no. Garlic cloves, crushed, लहसुन

4-5 no. dry Kashmiri red chillies, सूखी कश्मीरी लाल मिर्च

2 cups White peas (soaked overnight) भीगे हुए सफेद मटर

½ tsp Asafoetida, हींग

1 tsp Turmeric powder, हल्दी पाउडर

1 heaped tsp Degi red chili powder, देगी लाल मिर्च पाउडर

1 tbsp Coriander powder, धनिया पाउडर

3 cups Water, पानी

Salt to taste, नमक स्वादअनुसार

Prepared tadka, तैयार किया हुआ तड़का

2 tsp dry Mango powder, आमचूर पाउडर

 

For Tadka

¼ cup Ghee, घी

1 tsp Cumin seeds, जीरा

½ tsp Fennel seeds, सौंफ

A pinch of Asafoetida, हींग

1 tsp Degi red chili powder, देगी लाल मिर्च पाउडर

 

For Garlic Flavoured Oil

3-4 no. Garlic cloves, finely chopped, लहसुन

2-3 heaped tbsp Ghee, घी

2 tbsp Oil, तेल

 

For Coating

¼ cup Semolina, सूजी

¼ cup Poppy seeds, खसखस

1 tbsp Degi red chili powder, देगी लाल मिर्च पाउडर

Salt to taste, नमक स्वादअनुसार

 

Other Ingredients

1-2 tbsp Oil (for coating dough) तेल

1-2 tbsp prepared Garlic flavoured oil (for cooking paratha) तैयार किया हुआ लहसुन का तेल

 

For Garnish

1 large Onion, finely chopped, प्याज

1 no. Lemon, cut into quarters, नींबू

4 no. Green chillies (less spicy & finely chopped) हरी मिर्च

2 tbsp fresh Coriander leaves, finely chopped, धनिया पत्ता

1 inch Ginger (peeled & julienned) अदरक

2 no. Green & red chillies, हरी और लाल मिर्च

A pinch of Chilli flakes, चिल्ली फ्लेक्स

Process

For Dough

  • In a bowl or parat, add refined flour, salt to taste, water as required, oil and knead it into semisoft dough.
  • Cover it with a damp cloth and leave it aside to rest for at least 30 minutes.
  • Take a large sized ball of dough, roll and flatten it.
  • Roll it into a thin sheet, grease it with oil or prepared garlic flavoured oil.
  • Fold it in pleats with the help of fingers. stretch and roll the pleated dough.
  • Rest the roll dough for 10 minutes.
  • Take the rolled ball, place it into the coating mixture and coat it evenly.
  • Roll the coated dough ball into a thin sheet and thoroughly apply the prepared garlic flavoured oil on the paratha.
  • Heat a tawa, add prepared garlic flavoured oil, place the rolled paratha and cook it on both sides until golden in color.
  • Grease with ghee and crush the naan to form layers.

 

For Cooking Matara

  • In a pressure cooker, add mustard oil, once it’s smoky hot, add cumin seeds, garlic cloves, dry kashmiri red chillies, soaked white peas and mix it well.
  • Add asafoetida, turmeric powder, degi red chili powder, coriander powder, water and give it a good mix.
  • Cover it with a lid and cook it for 3-4 whistles until cooked well.
  • Add salt to taste and give it a quick boil.
  • Finish it with prepared tadka, dry mango powder and give it a good mix.
  • Transfer it to a serving dish, garnish it with onion, lemon, green chillies, fresh coriander leaves, ginger and green & red chillies.
  • Serve hot with prepared laccha paratha and curd.

 

For Tadka

  • In a pan, add ghee, once it’s hot, add cumin seeds, asafoetida, degi red chili powder and cook it for a minute.
  • Turn off the flames and keep it aside for further use.

 

For Garlic Flavoured Oil

  • In a pan, add garlic, ghee, oil and cook it for 5-6 minutes on low flames until garlic turns golden in colour.
  • Turn off the flames and keep it aside for further use.

 

For Coating

  • In a tray, add semolina, poppy seeds, degi red chili powder, salt to taste and give it a good mix.
  • Keep it aside for further use.
