Soya Kofta Curry सोया वड़ी से बनाएं ये मसालेदार कोफ्ता करी Soya Chunks कोफ्ता
Calling all Kofta lovers :) Soya chunks are rich in protein and a common favourite with all. What if you could make an easy and creamy Kofta with it? Here's my simple yet interesting Soybean Kofta recipe with quick tips too.
Ingredients
For Cooking Soya
2 tbsp Oil, तेल
1 tbsp Ghee, घी
1 tsp Cumin seeds, जीरा & 10-12 no. Black peppercorns, काली मिर्च के दाने
2 no. Garlic cloves, crushed, लहसुन
1 large Onion, roughly sliced, प्याज
3-4 no. dry Kashmiri red chillies, सूखी कश्मीरी लाल मिर्च
2 medium Potatoes, cut into diced, आलू
1 tbsp Ginger Garlic paste, अदरक लहसुन का पेस्ट
½ tsp Turmeric powder, हल्दी पाउडर
1 heaped tsp Degi red chili powder, देगी लाल मिर्च पाउडर
1 tsp Coriander powder, धनिया पाउडर
1 tbsp dry Fenugreek leaves, कसूरी मेथी
200 gms soaked Soya chunks, सोया वड़ी
Salt to taste, नमक स्वादअनुसार
1 cup Water, पानी
½ cup Chana dal, washed, चना दाल
¾ cup Water, पानी
For Soya Wadi Kofta Curry
2-3 tbsp Oil, तेल
½ tsp Cumin seeds, जीरा & ½ tsp Fennel seeds, सौंफ
1 large Onion, finely chopped, प्याज
2 no. Green chillies (less spicy & finely chopped) हरी मिर्च
1 inch Ginger (peeled & finely chopped) अदरक
1 tbsp Tender Coriander stem, chopped, धनिये के डंठल
½ tbsp Coriander powder, धनिया पाउडर
½ tsp Turmeric powder, हल्दी पाउडर
2 tsp Degi red chili powder, देगी लाल मिर्च पाउडर
1 cup Curd, beaten, दही
1 ½ cups fresh Tomato puree, ताजे टमाटर की प्यूरी
Salt to taste, नमक स्वादअनुसार
2 cups Water, पानी
1 tbsp Cooked soya mixture, पका हुआ सोया का मिश्रण
Salt to taste, नमक स्वादअनुसार
For Kofta Mixture
Cooked soya mixture, पका हुआ सोया का मिश्रण
1 tbsp dry Fenugreek leaves, crushed, कसूरी मेथी
Salt to taste, नमक स्वादअनुसार
1 tsp dry Mango powder, आमचूर पाउडर
1 cup Soya chunks, powder (breadcrumbs / sooji) सोया वड़ी का पाउडर
Other Ingredients
Oil for frying, तलने के लिए तेल
2-3 tbsp Soya chunks (powder & coating) सोया वड़ी का पाउडर
For Garnish
Green chillies, cut into diagonally, हरी मिर्च
Ginger, julienned, अदरक
Coriander sprig, धनिया पत्ता
Process
For Cooking Soya
- In a pressure cooker, add oil, ghee, once it’s hot, add cumin seeds & black peppercorns, garlic, onion, dry kashmiri red chillies and saute it for 2-3 minutes.
- Add potatoes, ginger garlic paste, turmeric powder, degi red chili powder, coriander powder, dry fenugreek leaves and cook it for a minute.
- Add soaked soya chunks, salt to taste and cook it for a while on medium flames.
- Add water and give it a quick boil.
- Add chana dal, water, cover it with the lid and let it cook for 2-3 whistles until it’s cooked.
- Keep it aside to cool down at room temperature.
- Transfer the mixture into a mixer grinder jar and grind it into fine paste.
- Keep it aside for further use.
For Soya Wadi Kofta Curry
- In a handi,add oil, once it’s hot, add cumin seeds, fennel seeds, onion and saute it for a while until golden in colour.
- Add green chillies, ginger, tender coriander stems and saute it for a minute.
- Add curd and cook it for 2-3 minutes until oil separates from the masala.
- Add fresh tomato puree, salt to taste and cook it well for a while.
- Add water and let it simmer for 7-8 minutes on medium flames.
- Finish it with cooked soya mixture, salt to taste and mix it well.
- Transfer the gravy into a serving dish, place fried koftas, garnish it with green chillies, ginger and coriander sprig.
- Serve hot with roti.
For Kofta Mixture
- In a bowl, add cooked soya mixture, dry fenugreek leaves, salt to taste, dry mango powder, soya chunks powder and give it a good mix.
- Divide the mixture into small lemon size balls and coat it with soya chunks powder.
- Heat oil in a kadai, add prepared koftas and fry them until golden brown.
- Transfer it into an absorbent sheet and keep it aside for further use.
