Ingredients
Vindaloo Paste
1 cup red chilli, soaked in vinegar
½ tsp black peppercorns
½ tsp coriander seeds
½ tsp cumin seeds
½ tsp cinnamon sticks
½ tsp ginger roughly chopped
2-3 garlic cloves
1 tsp vinegar
500 gms chicken, cut
For Gravy
1 tsp Oil
1 medium onion, finely chopped
Coriander, for garnish
Yogurt, for garnish
Process
- To make the paste, add all the ingredients and blend them smooth. Now marinate the chicken and keep aside.
- Heat oil in a pan, add onions and sauté for a minute. Then add the marinated chicken and cook until moisture releases.
- Add water accordingly and cook thoroughly.
- Garnish it with coriander sprig and beaten yogurt.
- Serve hot with roti or rice.
