Chicken Pahadi kebab no Tandoor बिना तंदूर चिकन पहाड़ी कबाब हरियाली टिक्का

On high public demand, here's a popular recipe, my version of Pahadi Chicken Tikka Kebab. No Tandoor, no oven. Try it this weekend for a great match-time munch.

Ingredients

For Marinating Chicken

500 gm Chicken (boneless), cubes , चिकन

Salt to taste , नमक स्वादानुसार

1 tbsp Ginger-Garlic-Green chilli paste , अदरक लहसुन हरी मिर्च का पेस्ट

½ medium Lemon juice , नींबू का रस

 

For Green paste

1 small bunch Coriander leaves , धनिया पत्ता

½ small bunch Mint leaves, plucked , पुदीने के पत्ते

2-3 fresh Green chillies , हरी मिर्च

1 tbsp Dried Fenugreek leaves , कसूरी मेथी

1 heaped tbsp Oil , तेल

Salt to taste , नमक स्वादानुसार

For Second Marination

Prepared green paste , तैयार की हुई हरि पेस्ट

1 cup Hung Curd , टंगा हुआ दही

1 tbsp Mustard oil , सरसों का तेल

Salt to taste , नमक स्वादानुसार

½ tbsp Ginger-Garlic-Green chilli paste , अदरक लहसुन हरी मिर्च का पेस्ट

½ tsp Cardamom powder , इलायची पाउडर

½ tsp Carom seeds , अजवाइन

Other Ingredients

¾ cup Second Marination , सेकंड मेरीनेशन

Chicken , चिकन

1 tbsp Roasted Gram flour , भुने चने का बेसन

1 tbsp Mustard oil , सरसों का तेल

2 tbsp Oil for frying , तेल तलने के लिए

A pinch Chaat masala , चाट मसाला

A sprinkle of Black pepper powder , काली मिर्च का पाउडर

Process

For Marinating Chicken

  • In a bowl add chicken, salt, ginger-garlic-green chilli paste, lemon juice and mix everything properly and keep aside at least for 15-20 minutes.
  • After 15-20 minutes, take the marinated chicken and squeeze out the excess water from the chicken and keep aside for further use.

For Green paste

  • In a grinder jar add coriander leaves, mint leaves, dried fenugreek leaves, green chillies, salt, oil and grind it into a fine paste and keep aside for further use.

For Second Marination

  • In a bowl add prepared green paste, hung curd, mustard oil, salt, ginger-garlic-green chilli paste, cardamom powder, carom seeds and mix it properly.
  • Now add the squeezed chicken mix it properly ensuring that it coat’s everything and keep it aside for 10-15 minutes.

For Cooking Chicken Pahadi Kabab/Tikki

  • After 10-15 minutes, add roasted gram flour, mustard oil, mix it properly.
  • Now put this marinated chicken on the skewers and cook on a hot grill pan with some oil and cook from both sides until golden brown & cooked.
  • Remove and serve hot and sprinkle some chaat masala, black pepper powder and garnish with coriander leaves and lemon wedges.
