For Boiling

Water as required, पानी

Salt to taste, नमक स्वादअनुसार

1 tsp Sugar, चीनी

3 no. medium Onions, roughly diced, प्याज


For Chicken Marination

900 gms Chicken (drumsticks & thighs) चिकन

Salt to taste, नमक स्वादअनुसार

1 tbsp Oil, तेल

2 no. Green chillies (less spicy & broken into half) हरी मिर्च

1 heaped tbsp Ginger Garlic paste, अदरक लहसुन का पेस्ट

1 tsp Turmeric powder, हल्दी पाउडर


For Chicken Rezala

3-4 tbsp Ghee, घी

2 tbsp Oil, तेल

1 tsp Cumin seeds, जीरा

1 Green cardamom, हरी इलायची

1 no. Bay leaf, तेजपत्ता

½ inch Cinnamon stick, दालचीनी

Marinated chicken, मैरिनेटेड चिकन

Prepared boiled onions paste, उबले हुए प्याज का पेस्ट

2 no. Green chillies, roughly chopped, हरी मिर्च

1 tbsp Coriander powder, धनिया पाउडर

1 tsp Turmeric powder, हल्दी पाउडर

½ tsp Degi red chili powder, देगी लाल मिर्च पाउडर

½ cup Curd, beaten, दही

1 ½ cups Water, पानी

½ cup fresh Coriander leaves, finely chopped, धनिया पत्ता

½ tbsp Black cardamom & Black peppercorns powder, काली इलायची और काली मिर्च का पाउडर

1 tbsp Fried onions & cashew nuts paste, तले हुए प्याज और काजू का पेस्ट


For Garnish

Coriander sprig, धनिया पत्ता

Boiled Egg, उबला हुआ अंडा


For Boiling

  • In a sauce pot, add water, once it’s roaring boiled, add salt to taste, sugar, onions, cover it with the lid and cook it for 7-8 minutes until cooked well.
  • Strain out the onions, transfer it to a mixer grinder jar and grind it smoothly.
  • Keep it aside for further use.


For Chicken Marination

  • In a bowl, add chicken, salt to taste, oil, green chillies, ginger garlic paste, turmeric powder and mix it well.
  • Keep it aside to marinate for 10-15 minutes.


For Chicken Rezala

  • In a handi, add ghee, oil, once it’s hot, add cumin seeds, green cardamom, bay leaf, cinnamon stick and let it splutter.
  • Add marinated chicken and saute it for a while.
  • Add prepared boiled onion paste and cook it well.
  • Add green chillies, coriander powder, turmeric powder, degi red chili powder and saute it a minute.
  • Add curd and simmer it for a minute, cover it with the lid and cook it for 5-6 minutes until cooked well.
  • Add water, fresh coriander leaves, black cardamom & black peppercorns powder and let it simmer for a while.
  • Finish it with some fried onions & cashew nuts paste and mix it well.
  • Transfer it to a serving dish, garnish it with coriander sprig and boiled egg.
  • Serve hot with roti.
