Assamese Chicken Fry Recipe - Ranveer Brar

Ingredients

1 tbsp oil
10-12 baby potatoes, halved
Salt to taste
½ tsp turmeric
1 baby leaf
2-3 cloves
3-4 cinnamon
2-3 red chilies, broken
1 tbsp ginger- garlic, chopped
1 cup onion, chopped
500 gms chicken, boneless, cut into 1 inch cubes
1 tsp red chili powder
½ tsp cumin powder
¼ tsp turmeric
8-9 cherry tomatoes halved or 1 medium tomato, chopped
1 tsp garam masala

Process

:
1. Heat oil in a non-stick pan, add baby potatoes along with turmeric and stir fry until they turn light pink in color. Remove & keep aside.
2. To the same pan, add whole spices and cook for a minute. Now add ginger, garlic and onion and cook until it turns soft. Now add the chicken pieces, cumin powder, red chili powder and turmeric and cook for 3-4 minutes. Keep stirring occasionally.
3. Add the cherry tomatoes, garam masala and half cup of water or stock. Add the half-cooked potatoes, cover-cook for 5-7 minutes more until all the water is absorbed.
4. Remove, transfer to the serving dish and serve hot with rice.
