Ingredients

For Bael Mixture

3 no. Bael fruits, pulp, बेल के फल

Water as required, पानी

1 cup sugar, चीनी

 

For Bael Ka Sharbat
4-5 no.Ice cubes, बर्फ के टुकड़े

¼ cup Prepared jaggery syrup, तैयार की हुई गुड़ की चाशनी

Prepared bael mixture, तैयार किया हुआ बेल का मिश्रण

Water as required, पानी

 

For Namkeen Bael Ka Sharbat

4-5 no. Ice cubes, बर्फ के टुकड़े

1 tsp Prepared jeera mixture, भुने हुए जीरे का मिश्रण

Prepared bael mixture, तैयार किया हुआ बेल का मिश्रण

Water as required, पानी

 

For Jaggery Syrup

2 cups Water, पानी

1 cup Jaggery, गुड़

5-6 no. Green cardamom, crushed, हरी इलायची

 

For Roasting Jeera

Salt to taste, नमक स्वादअनुसार

1 tbsp Cumin seeds, जीरा

½ tbsp Pink salt, काला नमक

 

For Sattu Mixture

1 cup Sattu flour, सत्तू का आटा

3 cups Water, पानी

 

For Meetha Sattu

¼ cup Prepared jaggery syrup, तैयार की हुई गुड़ की चाशनी

4-5 no. Ice cubes, बर्फ के टुकड़े

Prepared sattu mixture, तैयार किया हुआ सत्तू का मिश्रण

 

For Namkeen Sattu

2-3 tbsp Onion, finely chopped, प्याज

1 tsp Lemon juice, नींबू का रस

¼ inch Ginger (peeled & grated) अदरक

1 no. Green chilli (less spicy & finely chopped) हरी मिर्च

1 tbsp fresh Coriander leaves, finely chopped, धनिया पत्ता

2 tsp Prepared jeera mixture, भुने हुए जीरे का मिश्रण

½ tsp Prepared jaggery syrup, तैयार की हुई गुड़ की चाशनी

4-5 no. Ice cubes, बर्फ के टुकड़े

Prepared sattu mixture, तैयार किया हुआ सत्तू का मिश्रण

 

For Meetha Gond Katira Shikanji

2 tbsp Gond katira, soaked overnight, भीगा हुआ गोंद कतीरा

½ tbsp Lemon juice, नींबू का रस

½ Lemon, sliced, नींबू

¼ cup Prepared jaggery syrup, तैयार की हुई गुड़ की चाशनी

½ tbsp Mint leaves, chopped, पुदीना पत्ता

A pinch of Edible camphor, crushed, कपूर

2-3 no. Ice cubes, बर्फ के टुकड़े

Water as required, पानी

 

For Namkeen Nimbu Shikanji

2 tbsp Sabja seeds, soaked overnight, भीगे हुए सब्जा के बीज

½ tbsp Lemon juice, नींबू का रस

½ Lemon, sliced, नींबू

2 tsp  Prepared jeera mixture, भुने हुए जीरे का मिश्रण

1 tbsp Prepared jaggery syrup, तैयार की हुई गुड़ की चाशनी

Ice cubes, बर्फ के टुकड़े

Water as required, पानी

 

For Garnish

Lemon, sliced, नींबू

Mint sprig, पुदीना पत्ता

Process

For Bael Mixture

  • Take bael fruits, break the fruits with the help of any heavy spoon or rolling pin and remove all flesh into the bowl.
  • Add water and squeeze out all the pulp ,add sugar and give it a good mix.
  • Keep it side for a while to rest.
  • Strain the pulp and keep it aside for further use.

 

For Bael Ka Sharbat

  • In a serving glass, add ice cubes, prepared jaggery syrup, prepared bael mixture, water as required and stir it well.
  • Garnish it with lemon sliced and mint sprig.
  • Serve chilled.

 

For Namkeen Bael Ka Sharbat

  • In a serving glass, add ice cubes, prepared jeera mixture, prepared bael mixture, water as required and stir well.
  • Garnish it with lemon sliced and mint sprig.
  • Serve chilled.

 

For Jaggery Syrup

  • In a pan or saucepan, add water, jaggery, green cardamom and simmer it for 2-3 minutes until the jaggery gets dissolved.
  • Transfer it to a bow and keep it aside for further use.

 

For Jeera Mixture

  • In a pan, add salt to taste, cumin seeds and dry roast it for 2-3 minutes on low flames.
  • Transfer it to a butter paper or kitchen platform and crush it with the help of a rolling pin.
  • Transfer it to a bowl, add pink salt and give it a good mix.
  • Keep it aside for further use.

 

For Sattu Mixture

  • In a bowl or serving jar, add sattu flour, water and give it a good mix.
  • Keep it aside for further use.

 

For Meetha Sattu

  • In a serving glass, add prepared jaggery syrup, ice cubes, prepared sattu mixture and stir it well.
  • Serve chilled.

 

For Namkeen Sattu

  • In a serving glass, add onion, lemon juice, ginger, green chilli, fresh coriander leaves, prepared jeera mixture, prepared jaggery syrup, ice cubes, prepared sattu mixture and stir it well.
  • Serve chilled.

 

For Meetha Gond Katira Shikanji

  • In a serving glass, add soaked gond katira, lemon juice, lemon slices, prepared jaggery syrup, mint leaves, a pinch of crushed edible camphor, ice cubes, water as required and stir it well.
  • Garnish it with lemon sliced and mint sprig.
  • Serve chilled.

 

For Namkeen Nimbu Shikanji

  • In a serving glass, add soaked sabja seeds, lemon juice, lemon slices, prepared jeera mixture, prepared jaggery syrup, ice cubes, water as required and stir well.
  • Garnish it with lemon sliced and mint sprig.
  • Serve chilled.
