Ingredients

For 1st Marination

1 kg Chicken legs (slit), चिकन

2 heaped tbsp Ginger Garlic green chili paste, अदरक लहसुन हरी मिर्च का पेस्ट

2 heaped tbsp Mayonnaise, मेयोनेज़

Salt to taste, नमक स्वादअनुसार

Prepared second marination, तैयार किया हुआ मेरिनेशन

 

For 2nd Marination

1 ½ cups Curd (beaten), दही

2 heaped tbsp Degi red chilli powder, देगी लाल मिर्च पाउडर

1 tbsp Coriander powder, धनिया पाउडर

1 tsp Cumin powder, जीरा पाउडर

1 heaped tbsp Cornstarch, कॉर्नस्टार्च

2 tbsp Mayonnaise, मेयोनेज़

Salt to taste, नमक स्वादअनुसार

 

For Dressing

6-7 no. Garlic cloves, लहसुन

½ cup Fresh cream, ताज़ा मलाई

1 cup Processed cheese (grated), चीज़

6 no. Boiled egg whites, उबले अंडे का सफेद भाग

2-3 tbsp Fresh cream, ताज़ा मलाई

Salt to taste, नमक स्वादअनुसार

 

For Cooking Chicken

2 tbsp Oil, तेल

Marinated chicken, मैरीनेट किया हुआ चिकन

Prepared dressing, तैयार की हुई ड्रेसिंग

 

For Salad

3-4 no. Green chillies (less spicy & finely chopped), हरी मिर्च

½ inch Ginger (peeled & julienned), अदरक

2-3 tbsp Mint leaves (roughly torn), पुदीना पत्ता

1 tbsp Tender Coriander stems (finely chopped), धनिया के डंठल

 

For Garnish

Prepared salad, तैयार किया हुआ सलाद

Dry Fenugreek leaves (crushed), कसूरी मेथी

Black pepper powder, काली मिर्च पाउडर

Boiled egg (sliced), उबला हुआ अंडा

Coriander sprig, धनिया पत्ता

Process

For 1st Marination

  • In a bowl, add chicken legs, ginger garlic green chilli paste, mayonnaise, salt to taste and marinate well.
  • Keep it aside for 10-15 minutes.
  • Now, add prepared second marination to the chicken and marinate well.
  • Keep it aside for 10-15 minutes.

 

For 2nd Marination

  • In a bowl, add curd, degi red chilli powder, coriander powder, cumin powder, cornstarch, mayonnaise, salt to taste and give it a good mix.
  • Keep it aside for further use.

 

For Dressing

  • In a bowl, add garlic, processed cheese, boiled egg whites, fresh cream, salt to taste and mix well.
  • Transfer the mixture to a mixer grinder jar and grind it into the smooth fine paste.
  • Keep it aside for further use.

 

For Cooking Chicken

  • In a pan, add oil, once it’s hot, place marinated chicken and cook for 10-15 minutes.
  • Flip the chicken in intervals, add the prepared dressing and spread it evenly over the chicken.
  • Cover it with the lid and cook for another 4-5 minutes or until the chicken is fully cooked and tender.
  • Transfer to a serving dish and garnish with prepared salad, crushed dry fenugreek leaves, black pepper powder, boiled egg and coriander sprig.
  • Serve hot.

 

For Salad

  • In a bowl, add green chillies, ginger, mint leaves, tender coriander stems and give it a good mix.
  • Keep it aside for further use.
