Gobhi Chilli Gravy bonus होटल जैसे गोभी चिली बनाएं
It's cricket season!!Snack to बनता है :) Here are my tried & tested recipes for Gobi Chilli or Chilli Gobhi, dry and gravy.
Ingredients
For Gobhi chilli
1 large Cauliflower (florets), फूलगोभी
For Batter
3 cups Refined flour, मैदा
½ cup Cornstarch, कॉर्नस्टार्च
Salt to taste, नमक स्वादअनुसार
1 tsp Sugar, चीनी
1 tsp Vinegar, सिरका
Water as required, पानी
½ tsp Oil, तेल
For Sauce
½ cup Tomato ketchup, टमाटर केचप
2 tbsp Red chilli sauce, रेड चिली सॉस
2 tbsp Green chilli sauce, ग्रीन चिली सॉस
1 tbsp Vinegar, सिरका
1 tsp Soy sauce, सोया सॉस
For Gobhi Chilli Gravy
1 tbsp Oil, तेल
2 no. Dry kashmiri red chillies (roughly cut), सूखी कश्मीरी लाल मिर्च
1 tsp Tender Coriander stem, finely chopped, धनिये के डंठल
1 tsp Ginger (peeled & finely chopped), अदरक
1 medium Onion (diced), प्याज
1 tsp Ginger Garlic paste, अदरक लहसुन का पेस्ट
½ cup Mixed bell peppers (diced), शिमला मिर्च
2 heaped tbsp Prepared sauce, तैयार किया हुआ सॉस का मिश्रण
½ cup Water, पानी
½ tsp Soy sauce, सोया सॉस
1 tsp Chilli oil, चिल्ली ऑइल
1 tbsp Cornstarch slurry, कॉर्नस्टार्च घोल
Fried cauliflower, तली हुई फूलगोभी
Other Ingredients
Oil for frying, तलने के लिए तेल
For Garnish
Spring onion, chopped, प्याज़ पत्ता
Coriander sprig, धनिया पत्ता
Process
For Batter
- In a bowl, add refined flour, cornstarch, salt to taste, sugar, vinegar, water, oil and give it a good mix.
- Add cauliflower florets into the batter and coat well.
- Add cauliflower into hot oil and fry them until light golden in colour and crispy in texture.
- Transfer it into the absorbent sheet and keep it aside for further use.
For Sauce
- In a bowl, add tomato sauce, red chilli sauce, green chilli sauce, vinegar, soy sauce, mix everything well and keep aside.
For Gobhi Chilli Gravy
- In a wok, add oil, once it’s smoky hot, add dry red chillies, tender coriander stems, ginger and saute for a minute.
- Add onion, ginger garlic paste, mixed bell peppers and toss it everything for 2-3 minutes on high flames.
- Now, add prepared sauce, water, soy sauce, chilli oil and give it a quick boil.
- Add cornstarch slurry, chilli oil, fried cauliflower and cook it on high flames for another 2-3 minutes.
- Transfer it into the serving bowl and garnish it with spring onion and coriander sprig.
- Serve hot.
